  • My Mum bought me the SW magazine. Very nice of her. So it looks like she's on board for helping, haha.

    Because I don't want to go mad (and because of the limited room in my freezer), I have chosen a couple of meals that I might try this weekend.

    There's one called the Ultimate curry sauce which is a base sauce which you then add to. Looks nice, so will give that a go.

    There's also a pizza which is a favourite of mine. Whilst the WW wrap was nice last Friday, in the mag, there is a pizza base from cauliflower. Interesting. Just wondered if anyone had tried it and could tell me if it's even worth bothering with.

    Personally I don't like the cauliflower rice or using it as a base. I find it very bland. I prefer to make a hash brown base which is definitely much more filling but of course it depends on whether you are limited on carbs or if are doing an EESP day.

    I'm making hash browns to have with breakfast at the moment. It's a PON recipe but it's in the book so not sure if it's online.

    That's great to know that your mum's on board Pollyanna especially as she cooks for you a number of times each week. You'd be hard pushed to do SW with several off plan meals on a regular basis.

    It's a good idea to try some SW friendly recipes from the magazine (or from on here or by Googling). I'm not a fan of pizza so I can't comment and because I rarely do EESP I've never tried cauliflower rice as I'm happy with normal rice. I do like cauliflower and (like the steaks we're having later) it's easy to spice it up with some garlic granules and seasoning.

    I think you posted that you sit down with the girls and plan meals for the week?? Do you get an input? I'd suggest you encourage them to try some of the SW recipes. It doesn't have to be anything outlandish, most children like meatballs or chicken something or burgers or sausages and chips. Maybe they'll be up for the curry sauce recipe?

    It's DGD1's birthday today so some cake will be involved. We'll probably go round to her at teatime for a while. I'll be driving later so no bubbles involved today.;) I'm keeping all the things I have control of low syn but I know I'll be over for the week so I'm just going to do a beanie and plod on.

    Today's EE plan:
    B: NAS grapefruit, baked beans (F), HEB toast, fried egg (P), HEA milk for drinks
    L: LO chicken casserole and veg (F & S)
    D: baked haddock (P), SW chips (F) with cauli steak, tomatoes, mushrooms and asparagus (S)

  • Yay i'm home! :)
    Weighed this morning and a 3lb increase ewwww ekkk!!! But I did eat chicken and mushroom pie and chips from the chippie and a rather large slab of chocolate flake and i don't know what else cake covered with cream last night....I enjoyed it!
    Back to my healthy reality today and boy havn't I missed it! I could have killed for my wholemeal roll with cheese and beetroot at lunchtimes!
    The food was okaaayyyyyyyyy I suppose when we were away but wow couldn't I taste the oil in everything, put me off, but did find some lovely tuna salad with bake potatoes so ate that, lovely.
    Not sure what I am going to eat today as I have to go shopping, but I have started with some homemade soup from the freezer, broccolli, carrots, onions, mushrooms, potatoes, sweet potatoes so a good start, and for dinner, yay! more soup and a cheese and beetroot roll, can not wait! :)

  • Well, the spag bol from last night was made into six portions. Three back in the freezer for next time for me, DD1 and my dad (he comes to my house quite a lot!).

    It was a different make, but I discovered it was 12.5 per jar (Lloyd Grossman) and so have calculated 2.5 for my portion last night.

    The girls do input, but they (esp DD2) are fussy about what they eat. You would not believe the discussions we have re food!

    But dinners till Thursday (they go to their dad's for the weekend) are:-

    T - gammon, wedges, broccoli, carrots. I am going to eat this late as we are viewing a secondary school.

    W - tuna, pasta, mayo. I will have to eat this at gymnastics, they eat before we go.

    Th - chicken stirfy. This is our "new" recipe for the week which I try to do otherwise we'd eat the same things all the time! A lot of discussion went into it and it has been decided to go simple. Saw it in the SW mag and instead of some fancy sauce which the girls prob won't like, it said to cook noodles, chicken, broccoli (and something else which I can't remember) and then drizzle soy sauce over it. So it's plain and they prob won't have sauce (but the weirdos might prefer it that way). I am putting snap peas (think that's what they are called) and babycorn with it too.

    Rest of my menu for today:-

    B - Coffee (HEA1), watermelon (S), grapes (F)

    L - potato and leek soup (F, S). I found this bland when I had the first portion, so going to add two laughing cow (2/5 HEA2) and some salt.

    WM roll (HEB).

    WW Yogurt (0.5)

    D - As above.

    S - Alpen Bar (3.0)

  • I have something in my freezer which I made a while ago which I think should be fairly sw friendly.

    The ingredients are:-

    2tbsp oil (can't remember if I used oil or frylight, but in future, I would use frylight).

    125g rice

    150ml apple juice (think this is the only thing I need to syn?)

    300ml chicken stock

    175ml passata

    125g frozen peas

    250g cooked chicken

    I can post the recipe if you like, it is yummy. Could I please have the syns for the apple juice? I made it into three portions. When I make it again, I might just up the stock instead of using apple juice. Wouldn't think it would make that much difference??

    The apple juice isn't too bad at 2 Syns per 100ml so 3 syns for this recipe. The oil would be 12 syns so you'd need to syn 15 syns divided by however many portions it made. If you use Frylight then it would be 3 syns divided by however many portions - so 0.5 if it makes 6 portions or 1 syn if just 3 or 4 portions.

    Glad to hear mum is on board with trying SW recipes. Most of the recipes are very family friendly. As Maman said most kids like meatballs, chicken, burgers etc. You could also try making your own fish fingers, just use strips of white fish and dip in egg and breadcrumbs (I use part of my HEB wholemeal to make the crumbs).

    Today's plan:

    B - HM hash browns F & P, fried egg P, bacon P, tomato & mushrooms S
    L - Jacket potato F, beans F, lettuce, spinach, cucumber, tomato, celery, spring onions all S; dressed with walnut vinegar F
    D - Braised steak P, shallots, swede, carrot S, stock made with beef oxo & red wine stock pot; mash F (mashed with an egg P)

    HEA - milk
    HEB - none planned but have various options
    Syns - Vienna lolly 4

    I think when I made the chicken meal, it was while I was calorie counting, so I'm fairly sure I would used Frylight. So 2syns in total per portion as the pig in me divided it into 3 instead of 4.

    I have cooked chicken in my freezer. If I defrost it and put it in said recipe, I don't think I can then refreeze it, can I? I know you can refreeze raw chicken once it has been cooked, but probably not cooked chicken again.

    That's right, Frylight is free but you said you couldn't remember how you made it which is why Denise gave both syn values.

    You're right about the chicken. You can defrost frozen meat, cook it and freeze again but once it's been defrosted a second time you need to eat it.

    Thanks. Sorry. My quick read just made me see things that weren't there. I think I will defrost the chicken (think it's 200g) and make two portions out of it and eat it over a few days next week.
