The problem with the hat theory, is that while it often seems to hold true, it ignores that fact that there are plenty of non-hat wearing idioty out there.
And in fact some hat wearers are not part of the idioty.
To be truly defensive you have to treat every other road user as a potential member of the idioty before using any such method as the hat, the type of vehicle, the two-people-in-the-front-seats talking, or the holding small dog on lap theories to identify them.

Yeah, I bet you all smile sweetly when someone cuts you up meaning you have to slam on the anchors to avoid crashing into them, then drives 10 mph below the speed limit on a windy single lane road for miles.

My place of work is 28 miles away on the single carriageway not that major A road from the motorway to a seaside resort so I have no choice but to spend most days during summer either going to work or coming back from work at 10MPH below the speed limit if I'm lucky, usually its much less despite it being a fairly straight road.

I also have to cope with the same when I'm in my lorry and unlike you I have a limited amount of hours I can drive a day so such holdups can result in me not getting home that night, especially on a Friday.

I just put up with it because if I got raged like you every time it happened I'd be on my third or fourth heart attack.

I'd relax and think, 'Well I'll be old someday'.
One the other hand if your fuming causes you to have a heart attack you might not get to be old

Nope, I would not smile sweetly. However, in the unlikely event that my observation at any point was poor enough and that I was close enough to another car to put myself in a position where I had to 'slam on the anchors' I would not fume either.

Do you understand what cutting someone up involves? It's an instant fail on a driving test, and is considered dangerous driving. Because it's dangerous driving.

Loosing it because you do not like the actions of another road user would also cause you to fail your test.

I'm very much enjoying how frustration at a third parties bad driving also makes the OP a bad driver. Is it contagious? It's perfectly fine to get frustrated. Some might say it's not ok to pull them out of their motor and beat them with their own leg.

    Sure.

Nothing worse then those doing 40mph through the average speed camera zone set at 50mph, once out the zone, still 50mph but foot down to over 50mph, it's ok to do 50mph in the average speed camera zone!

Nothing worse than going for a drive in the countryside and you get stuck behind some old person in a Vauxhall Agila doing half the speed limit for miles.

OP get a faster car, then you can overtake much easier.

Old fogies used to practice "keeping whitey one foot under" in Austin Maxis and Morris Marinas when I were a lad. (IE driving a foot over the white line to stop anybody overtaking whenever the road was clear.

That teaches patience. You should be made to drive the North Wales coast road in a 1.0 Corsa every time the caravan club massive head down to Ccllannsomethingorother.
