Sure! Like any SW recipie, it isn't quite the same as the original dish but this is pretty darn good.
I often make it with with beef or pork too.
SERVES 4
500g mushrooms - I've used a mix of button and chestnut
3 shallots
2tsp smoked paprika - or to your taste.
Pink peppercorns (crushed) - again to your taste
300mi chicken stock
75g baby gherkins halved
150g fat free fromage frais
1tbsp lemon juice
Snipped chives - to make it look pretty at the end.
Quarter mushrooms
Sweat shallots in fry light until translucent. Add mushrooms and stirfry for 6-8 mins
Add paprika and peppercorns if using.
Pour in stock and bring to the boil.
Reduce heat and simmer for 10 mins or so. Stir occasionally.
Remove pan from heat and stir in gherkins, fromage frais and lemon juice.
Serve with rice or tagliatelle. Scatter snipped chives on to make it look less beige. Lol.
We've just eaten ours. It was scrummy. Sometimes it can look a bit curdled due to the low fat FF and not soured cream but it doesn't affect the taste. I believe it's because it's too hot when the FF goes in.
It doesn't freeze too good though.0 -

Thanks for adding me to the challenge, I wasn't sure if you'd seen me.
I've just got back from joining and my first weigh in...that's always scary, though I've been heavier!
The consultant is lovely. Friendly and down to earth and introduced me to few people to sit with as I'd gone on my own. They in turn were friendly and chatted a bit and said I should feel free to sit next to them next week.
So different to any of the other times I've joined and it makes me feel positive about going to group.
The book has changed a little but it's still basically the same so I'll be getting some meal plans together0 -

Evening all.
Thanks for the new thread and setting up our new chart and challenge. Much appreciated.
Busy old Day today and felt quite peckish all morning, but determined to stick to plan and keep it that way after the weekend.
Today’s meal plan:
B - banana, nectarine & tangerine
L - mixed salad with ham, dressing (2)
0% tog with apple (1), strawberries and mango
D - mushroom omelette with peppers & mixed veg, ham & cheese HEA2
HEA1 milk in drinks
No HEB today.
Hoping that the fact my office felt cold Today will have helped burn more calories trying to stay warm too!! ��One day the clocks will stop, and time won't mean a thing
