I forgot to get any pancetta so I axed the butter bean and pancetta soup and went with veggie soup instead (carrots, celery, onion, leek, potato, YUM ). Day 5/16 complete.
I have more of the same soup for tomorrow. Have a fab weekSave 12k in 2022 #26

More of the veg soup today. That's day 6/16 done . I've got the same again for tomorrow and I'm trying to work out what to make so I have some variety next week!Save 12k in 2022 #26

Tomorrow is day 7 - left over fajita chicken and veg with a microwave rice packet! Something different to soup haha0

Could I just butt in and say what I did before early retirement?
I needed to plan my expenditure, and before the BIG PLAN I always went to the sandwich shop and paid for it!
Then I was following a vlog and realised I could make up my lunchtime sandwiches for the week and FREEZE them!
So I tried it and never looked back.
Google it. Best I found were cream cheese and minced (leftover) chicken with stuffing on Monday.
Tuesday was Peanut Butter and a smear of honey/jam with strong cheddar.
Wednesday was Ham and Cheese see strong cheddar!
Thursday was two croissants with cheese and pickle (Kept pickle in my office drawer, it is indestructable with all that vinegar and stuff in!)
Friday, met with colleagues for a light lunch in the local pub, our treat.
All of the above, apart from Friday can be made up and frozen. Honestly, try it.
Half an hour on Sunday got it all sorted. Honestly, I took whatever sandwich I wanted out of the freezer in the morning and by the time lunchtime came it was perfect. I am sure some of you don't believe me, but you might like to try it!0
