Me too on the salad front today Purplemum, the leftovers from Wednesday. At least they were already chopped/sliced etc so not so much faffing this morning. :-)
Like you I am going to organise next week's lunches over the weekend, and try to get a bit more variety in my food!

I'm looking for a couple of challenges.
This will be a nice one for March. I tend to take lunch (I'm too lazy to wait in the long queue at work). I need ideas because some days all I take is a cup of soup and that's not enough.

I was in London for work Thursday and Friday so bought lunch - I do get it back on expenses, but still!

Checking in after a few days, 2 lunches of Kale, Mackerel and Pearl Barley salad.
Was struggling a bit with breakfast until I found how easy overnight oats are to do! My fav so far, Kiwi and Honey, so cheap and so good, keep me going til at least lunchtime with not hunger pain which is unheard of for me!!

Lunches this week are as follows:
M - Left over pulled beef chilli and a roll
T - Soup and a roll
W - Left over beef and ale casserole
T - Tuna mayonnaise sandwich and a cuppa soup
F - Pot noodle
