Lyndsay_21 - have you tried using a hand whisk to make your mash with? That's how the (old-fashioned-who-could-cook!) dinner ladies used to do it. I always use my electric hand mixer and haven't had a complaint about lumps in years!
When you cook your potatoes for mash, cut them into small, even sized pieces; then check them with the point of a sharp knife/metal skewer to make certain they are cooked through to the centre. Then grab your electric hand whisk and voila!~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

What an excellent tip about freezing bananas for cake-making!
I guess the advice about not freezing is because they won't thaw out to be the same textured fruit they were...but for anything you need them mushy in, perfect! I have never done this! Thanks Catznine!0 -
I've thrown away loads in the past as well!
but you can only use the frozen bananas in cakes etc as they go a bit dark and mushy when defrosted.

I have been inspired by this thread to start baking!
I'm going to start off with Curry Queen's Microwave Pudding with lemon curd.
