    Lyndsay_21 - have you tried using a hand whisk to make your mash with? That's how the (old-fashioned-who-could-cook!) dinner ladies used to do it. I always use my electric hand mixer and haven't had a complaint about lumps in years!
    When you cook your potatoes for mash, cut them into small, even sized pieces; then check them with the point of a sharp knife/metal skewer to make certain they are cooked through to the centre. Then grab your electric hand whisk and voila!

    What an excellent tip about freezing bananas for cake-making!

    I guess the advice about not freezing is because they won't thaw out to be the same textured fruit they were...but for anything you need them mushy in, perfect! I have never done this! Thanks Catznine!

    I've thrown away loads in the past as well! :o but you can only use the frozen bananas in cakes etc as they go a bit dark and mushy when defrosted.

    I have been inspired by this thread to start baking!

    I'm going to start off with Curry Queen's Microwave Pudding with lemon curd.

    I'll see how it goes once I've done that!
