    How long did it take you ?

    I joined SW in July of last year and lost about 2 stone at first. After the engagement broke down, I was back to just 1st 3lbs in December... I basically started again in January, and have lost 4st 12lbs since.... So basically 16 months in total, about 10 months since getting back on ze wagon :)

    I made the Jalapeno grilled cheese last night!


    Half the peppers and de-seed then stuff with cream cheese (I used Philadelphia lightest and 3 peppers each).
    Bake in oven for 20 mins gas 4.
    Meanwhile, toast the bread (2 slices per person) in the grill pan with fry light and put the bacon under the grill. Put 20g of light cheddar on each toast.
    Remove the peppers from oven and cut each one into 3, put the bacon on the toasted cheese then the stuffed peppers on top.
    Make into a sandwich and return to the grill pan for a few minutes on each side.


    We had them with a side salad and leftover burger in a bowl sauce! Really nice but could have done with a bit more cream cheese, will add more next time. I work these out to be about 3 syns each, as everything except the cream cheese is on plan.

    Sounds good. Did you use 75g of Philli and 20g of light cheddar to make this HEA + 3?

    WI for e this morning but don't hold out much hope for a loss.

    Will post my menu this evening as no idea what we'll be eating yet as going to a friend's for lunch, which should be on plan as she is doing SW as well.

    I used Lightest Philadelphia so1 syn per 25g but didn't quite use all of the 75g Philadelphia per portion that I'd estimated, still counted that as 3 syns even though it was under. 2 x 20g light cheddar as HEA and 2 slices of w/meal toast as HEB. It was tasty enough, though slightly dry. Partly due to me slightly burning one side of the toast :D

    Today's menu:
    B - Omelette with bacon, onion, mushroom, cheese HEA & toast HEB, small handful of Strawberries
    L - Mexican Chicken from Take 5 with added baby corn, broccoli and garlic, boiled rice.
    D - SW Chicken satay stir fry

  • Wow Stoke, that is amazing, cheered me up no end.

    Weigh in this evening, should be interesting, not eaten since dinner on Tuesday, much better than yesterday (slept for 5 hours once I got home, but stayed in bed and then dozed for rest of day, slept reasonably well last night considering how much I slept during the day) but still off the thought of food, never mind eating it. I have brought some Weetabix in to work with me, so if I do feel the need, at least it will be HEXA&B!

    Can I be put down for 7lbs for the challenge please?
