Your mistake was in taking his word as gospel rather than doing a full investigation of what went on and getting a proper statement from him, then from her plus any witnesses and then coming to some kind of conclusion.
We all live and learn.
See what the company says, I think you need someone objective to look over all the details, paperwork (if any) and help you limit the damage.

I wasn't in possession of the full facts and made many many assumptions it would seem. And I shouldn't have.
I'm hoping we will get this sorted as I would like to keep her on the team and make sure she feels part of it.
Don't you have even the most basic grievance/disciplinary processes in place?
You want one drawn up by your HR consultants but in the mean time do some basic research.
