Forgot to say used kale instead of spinach as it was a lot cheaper. You could add chicken or whatever for meat eaters. I didn’t peel the sweet potatoes as life’s too short to peel anything 🤣I get knocked down but I get up again (Chumbawamba, Tubthumping)3

Your dinner looks good! Would frozen spinach be an option? I do like kale though and might just make a batch of this for work meals as I have sweet potatoes in. Thanks for posting the recipe!
I've just experimented with using cauliflower greens in place of kale a as roasted 'green'. It was nearly as good as the kale (washed, tossed in oil and seasoned, added in the last few minutes of oven time) so I'll add it to my repertoire of 'waste not want not'.I think a bit of sunshine is good for frugal living. I saw something about using cauliflower leaves in a stir fry the other day. Also saw something on using broccoli stalks. All worth a try. My mum used to chop cauli leaves and the middle of stalk and add to cabbage. Not in a stir fry though…….the type of cabbage that was boiled all morning whilst we were out at church and was ready for Sunday dinner when we came back 😂😂😂 A stir fry was far too adventurous for my dad……but in fairness to my dad I don’t even think they were around at the time. Eating habits have certainly changed. I think the first time I ever ate Chinese food was when I started going out with Mr M……and I was very adventurous having chicken, mushrooms and chips from his local take awayJanuary spends - £587.585
