    Just thought I'd update you on the frozen dumpling situation peeps....Indeed you can cook them from frozen! I froze them (uncooked) on a tray then popped in some Tupperware. Popped them in the casserole once it was bubbling with the lid off and cooked them for 35-40 min. They were slightly heavier than normal but I expected that, as anything with self raising flour should be cooked straight away.

    I know many peeps would say they are the easiest thing in the world to make but I like fried leak and cheese in mine so I don't really want to the chopping board, pan, grater etc out for the sake of a couple. Plus I hate washing the sticky bowl. Will definitely be batch prepping them again next time.

    Just read the earlier posts about stuffed mushrooms and I think I have been inspired to use up the leftover sausage and chestnut stuffing that's loitering in the freezer from christmas.

    Been trying to eat out the freezer but I can't resist a yellow sticker! I'm also on a mission to waste no veg....Problem is I'm the only one who eats salad regularly and I like variety. Been a bit naughty with wasting salad so I'm making my birthday month 'just say no to different tomato variety, you don't need two different coloured peppers and when did you ever enjoy a cucumber that wasn't smothered in humus or cream cheese' month. Any tips LFHW peeps?

    I find lettuce is the biggest waste so pay the extra and buy mixed leaves because I can get through a bag quite easily in a few days whereas a whole lettuce just goes limp in the fridge because I get fed up with it as never seems as tasty as mixed leaves. Not MSE but I hate waste more.

    I only buy the leaves now too.
    Do I need it or just want it.

    Quick brain pick please :).

    I plan to try a chicken Laksa recipe but want to half the quantities as it's just me. Any ideas on how I could use up a half can of light coconut milk? I usually make rice pudding with it but I'm not fancying it at the moment.

    Brambling - I freeze LO light coconut milk in 100ml portions in a silicon muffin pan; once frozen transfer into a freezer bag. I then use in a curry, usually when I reheat a too hot one but sometimes when I'm making one.

    I never use more than 100ml at a time so I only need 1 can for 4 curries :money:, so money saving too!

    There's no reason why you couldn't use frozen coconut milk to make rice pudding at a later date.

    Thanks Joedenise I wasn't sure if I could freeze it :) it will keep for more curries now I know. And I've check and only need 100ml

    I wasn't sure the first time I did it but thought I'm only going to waste it if I don't so worth a try - and it works. It does separate a bit on defrosting but soon mixes back again and now no waste!

    Morning all - not been here in the longest time but still doing LFHW.

    It's just been me and DD for most of this week so, as chief user upperer, I've been making inroads. Got a bolognaise sauce out for OH on Monday that he didn't eat so had half Monday and half Tuesday. I don't eat a lot of meat and spag bol is never something i'd choose but I'd rather eat it than waste it.


    DD and I had a veg stir fry with some leftover bits cluttering up the fridge on Wednesday and I had the leftovers yesterday.... I detest thinking about what to eat so leftovers is always my favourite thing! :D

    Thanks for the coconut milk tip, that's useful to know.

    I have a Lettuce keeper that someone on here kindly sent me and its brilliant If you haven't got one they are well worth getting.

    But failing that wrap lettuce in foil in the fridge and,especially the Cos or iceberg ones they will keep quite crisp Another tip is when you are cutting the leaves or a chunk off the lettuce, use a plastic knife and you won't get the browning of the edges of the lettuce .

    I wrap celery and cabbage in foil in the fridge and it keeps for ages

    Not to sure whats for dinner tonight its just so darned hot ,so probably salad and I may open up my little tin of pilchards which cost about 50p and I mix them up with a splash of sweet chilli sauce in a bowl and half will do with my salad and a small sweet jacket potato and the rest I will use for lunch on crispbread tomorrow. i love those dinky little tins of pilchards they are just enough for me for a dinner and as a quick lunch and the sweet chilli sauce gives it a bit of zip :)

    I have been MIA as real life just got in the way but I am still eating down my freezer at the moment so not a lot of shopping thank goodness :);)

    I wrap celery up in foil in the fridge and it keeps long enough for DH to eat it! I only eat cooked but only ever want a couple of stalks so DH usually finishes it off.

    We're not overly keen on cos or iceberg which is another reason for the mixed leaves. We prefer a mix as find cos and iceberg a bit bland on their own.

    Was in your neck of the woods today JackieO - went to Dobbies to get some BBQ briquettes as it's the nearest place to us that sells the Weber ones which seem to last much better than the cheaper ones.
