    I tend to make my own coleslaw and just make enough for that day - the carrots, cabbage & onion keep for ages so don't get wasted. I mix with either yoghurt or low fat mayo.

    I've done my menu plan for the month and will be using up a lot of what is in the freezers! Only need to buy a few things for meals plus fresh stuff, also need to top up on some tinned stuff so shopping ought to be a bit cheaper this month! Already bought milk for the month (I buy long life as get so used to it when we go to France as it can sometimes be difficult to get fresh!)

    Hello everybody, I'm a longtime lurker but have decided to take the plunge and ask if you would be kind enough to let me join the thread. Long story short, I am single and due to health issues I'm currently off long term sick (can't wait to get to get back TBH!). I'm currently looking to empty my freezer to defrost and make inroads on my 'brexit'/mobility problems store cupboard. As much as my disability allows I enjoy cooking different cuisines and eating what I can (I have to have a high protein diet supervised by my Consultant/dietitian). I've asked to join the July grocery challenge and the eating out of the freezer and cupboards thread to see if they will have a newbie there! :)

    Hello and welcome LizzieM, we are a pretty friendly bunch on here and are more than happy to help.great to see a 'lurker' taking the plunge :)

    using up what you have is a great way to save both time and effort in shopping I too am trying to 'eat down' my freezer as its well overdue a defrost :)

    Tonight I am at my sis -in-laws and she treated us both to a delicious pub dinner tonight. So no cooking for me, and tomorrow night I shall be at my DD's for a BBQ, so not a lot of cooking tomorrow either. I have been extending my salads with a jacket spud or a stuffed pepper instead of ham or cold meat and have found it a nice change not having to cook much in the heat. Thank goodness for my microwave.

    Often a bowl of soup and some crackers is enough to fill me up as I don't seem to have much of an appetite in the hot weather.

    Hope your long term sick will soon be over and you will soon return to health again.Think of LFHW as a challenge to see what you can come up with to streetch your stores out a bit, but you are very welcome so pull up a seat and join in with us all

    Welcome LizzieM. I lurk more than post if I'm honest! I don't have a lot of waste as I'm pretty good at buying just what I need but if for some reason I don't need to use something it'll go into the freezer for, probably, the next month. As you may have seen above I menu plan a month at a time using up stuff I have in the fridge/freezer/cupboards quite a lot.

    More HM ready meals end up in the freezer ready for another month as I cook 4 portions and we have half and freeze the other half.

    These things seem to help in not wasting food. The only stuff that goes into my food waste are things like peelings, teabags & stones/cores from fruit.

  • Lo chicken fried in butter with lo new potatoes sliced & fried + sweetcorn for DH & DSis. Not enough chicken for 3 so I had a fried egg.

    hello all
    do you think black pudding would work in stuffed mushrooms?
    i would normally use bacon, onions cheese etc but i dont have any bacon and hunting in the freezer i found a couple of slices of black pud i got yellow stickered. i'm just wondering if it would go with the cheese?
    the mushrooms need using up, the other thing i thought would be to stuff with black pud, onions and tomato and topped with breadcrumbs.

    Think I'd be inclined to go with the black pudding, onions & tomatoes topped with breadcrumbs.

    Black pudding with cheese doesn't appeal!

    Hello, first 'proper' post (if that's ok :) )

    Used up leftover yogurt on my cereal this morning (it was a little big 'tangy' but still more than edible. I cooked a chicken quarter for tea tonight with extra stuffing so I can have a chicken sandwich tomorrow. It's nice to have 'instant' sandwich fillings handy, and as I'm having chest stitches out first thing, then a landlord inspection at 12pm. My flat looks clean and tidy, but I have made quite a list of necessary repairs/maintenance (first on the list is fitting my new dishwasher - which I've been waiting for 3 months for!).

    Evening everybody,

    For lunch I had LO chicken and stuffing from yesterday in a pita, and for tea I used one of my 20g portions of pate I had (2 'crispbread sized portions went in the freezer)
    I then used the last pate portion to try something a bit different and found a recipe that intrigued me. Sweated onion and garlic in a pan whilst cooking some pasta. Then I combined the pate with onions to heat up and 'meld' IYKWIM then stirred the pasta in. Must admit I was a bit wary of the 'smell', but the finished dish was really quite tasty (and surprisingly light!).
