Yesterday's lunch was soup made from lo beef stew. I strained out the bits of meat, whizzed up the gravy and the bits of veg and pulses, added some curry powder and cumin, then put the meat bits back in. It tasted very similar to oxtail soup and went down a treat with a warm crusty roll.
Just the job now the winter's here.
This week's soup will be mushroom, thanks to a ys punnet of mushrooms for 40p. Probably enough for 4 portions so cheap as chips. I did well with other veg too - 1kg onions for 60p, a huge bag of spring greens for 75p, some fine green beans for £1 (4 portions) and a bag of bell peppers for £1.35. There were 6 in the bag, 4 red/1 yellow/1 green, a bit mis-shapen but all a decent size. At just under 23p each that's a much cheaper option than single ones at 50p each.That's veg sorted for at least a week.
After much deliberation and research, I've treated myself to an air fryer this week. I think most people tend to use these as a healthier cooking option for chips as only a light spray of oil is needed. They can be used for so much more though and I used it yesterday for the part-baked rolls. Eight minutes and just as good as done in the oven at far less cost.The manual only gives 3 recipes (one for chips, of course) so when I'm out and about I'll be scouring the cs for a recipe book. In the meantime, I'll just experiment. :rotfl:

Hi ladies, any ideas on what to do with leftover baked ham? I cooked it in a marmalade and mustard glaze. One child liked it and one said it was disgusting. Hubby happy to eat it too but I have loads left. It seems to be a never ending joint! X0

Ooo, that sounds good! :T I knew someone on here would come up with a suggestion, so thanks for that. Was it the glaze the disgusted child didn't like? Oh dear, can't please everyone.Suggestions for the lo's: thinly sliced for sandwiches, freeze some slices for later use, chop up into small pieces and make a chicken & ham pie, add to bolognaise sauce, fry a thick slice and serve with egg & chips, make a ham & veg quiche, ham & celery soup. I'm sure there's lots more ideas but these are just off the top of my head.

YorksLass I have been experimenting more with my airfryer recently
. I find Jacket potatoes taste like oven baked ones I tend to microwave for 5 minutes and then airfry for 10 depending on size.
HM scotch eggs also worked well too as does things like chicken Kiev and anything pastry based like quiches or tarts.

I slice and freeze surplus ham, wrapped in slices of four in foil they freeze brilliantly and are great for the odd lunch for me or diced up in pasta.
My DD has an airfryer she doesn't use I may see if she wants to donate it to her old Mum and give it a go,I rarely eat chips(special treat now and again at the pub quiz night) so would be interested in recipes as well

Another thing I do in my air fryer is roast chick peas. Again with Frylight, or any herbs, sea salt, black pepper etc.I either eat them like nuts, or put them on top of a salad

Roasted chickpeas sound really nice, and I think I would like to try to use in a salad as I do eat salads if possible with most meals:j0
