I seem to have massively overbought on veg. Tonight we had a cheesy veggie bake, but i've still loads of greens left to use. I've a savoy cabbage, curly kale, spinach and cavolo nero - any ideas? I guess a soup...

Maybe a green smoothie? Curly kale is good deep-fried - only takes a couple of minutes and comes out nice and crispy.

All Xmas food shopping done yesterday and, for once, I haven't gone overboard. ;) Partly because there's only the two of us this year and partly because I couldn't get out of the sm soon enough! It was absolutely manic. :( Menu plan done (loosely) up to and including Xmas Day and after that I'll see what's left for the rest of the week. Poached white fish tonight with mash, spring greens and parsley sauce; hm beef casserole (from freezer) tomorrow and Monday will probably be soup and a sandwich. There's certainly enough veg in the fridge to make a vat of soup! :D

DH wasn't really hungry this morning so he just had cereal; I cooked down a couple of tomatoes that were too soft for sandwiches, added some basil and had those on one half of a toasted wholemeal muffin and a poached egg on the other half.
Be kind to others and to yourself too.
  • Well I have been eating down my fresh food stuff and tonight from the freezer I used up a chilli chicken breast with a jacket spud and the last of the salad stuff.I have at the moment 5 small-med potaoes half a box of grapes a wodge of garlic and herb cheese (not very big so I may peel and mash the spuds tomorrow and chuck the cheese in as well then with the ice cream scoop once it cold 'ball' the mash up and freeze for when I am back home in the New Year tomorrow I have breakfast of porridge and lunch of soup and crackers then I am at youngest DDs for dinner tomorrow night, then at eldest DDs on monday afternoon until mid day tuesday then to youngest DDs until new years eve then back to the eldest until 4th January, so I am making sure my fresh stuff is all used up before I go on my travels :):)

I didn't manage to empty my freezer although there is a bit more room in there ,so I shall keep on using up as much as I can in the New Year as it really does need defrosting badly.

Still have quite a bit of cash in my food purse as I have not had to buy much this month at all. I may stack it in the tin in my cupboard before I go away and it will be added to my January budget, so if I hopefully manage to eat down the freezer I will have a good chunk in the tin to restock with IYSWIM :)

If I don't get a chance before next week may I wish all my 'virtual ' friends who have been with me this year in the LFHW journey a very Happy Christmas and fingers crossed we will all be back together again in 2019

Happy New Year as well chums

I often make my own yogurt. The day before yesterday I knew, as I mixed the saved up starter with the heated then cooled down milk, that it was a bit too cool.

Laziness, or a case of hope over experience, I mixed it in, put it in the flask, wrapped it in a blanket and put it near the kitchen radiator as usual.

Yesterday morning I knew even before opening the flask, from the sloppy sound, that it hadn't really set.

So instead of suffering through sloppy wet yogurt, I put it in a muslin and hung it to drip over the kitchen sink.

This morning I found a lovely lump of cream cheese inside the muslin, which I turned into small balls by rolling spoonfuls in my wet hands. I placed them in an old clean jar and topped it up with good quality olive oil. TA-DAH!!! Labneh for spreading on crackers or adding to eggs in tomato sauce during the Christmas days! Result!

Normally I would have kept the whey for baking but it was a fairly small amount and had already baked a large loaf of bread. Otherwise it's really good to add to baked goods, especially to soda scones.

    Merry Christmas everybody! X
Finally I'm an OAP and can travel free (in London at least!).

Hubby and I have just had twelve lovely days away in the Cuban sun. Both have eaten too much and enjoyed the rum cocktails. Hic!
I always surprises me how much food people waste when helping themselves to a buffet. Hubby and I have a mantra, never take more than you can eat.
We are continuing to eat from the freezer. We are starting to see some wiggle room. Hubby bought 3 lots of 4pints of milk for 60p.
I had a brain wave, at the moment all the shops are selling the veggies at rock bottom prices, so tomorrow I am going to send hubby out to buy some extra bags of Brussel sprouts, parsnips, cauliflower and carrots. I am going to blanch them and then freeze them, ready to use in the new year.

I also take advantage of the cheap bags of potatoes - 2.5kg for 29p.
Boil a big pan up and mash them.
It usually makes 4 double portions for us to go into the freezer for a quick dinner of bangers and mash or as a topping for shepherds pie.
I don't use much butter or any milk before freezing.

Bought ten packs of salmon all reduced to £2 each (not the best bargain of the year but as we eat quite a lot of salmon a good saving for us). Also two lots of steak (reduced) and a whole shoulder of lamb for £4.78 (1/4 price). This I am possibly going to turn into Cumberland pie/ moussaka for the new year. Bought extra carrots, parsnips, Brussels and potatoes. Finally, we bought a turkey crown from £20 down to £13, which we are freezing - we have four friends to dinner in March.
Today, as mentioned yesterday we have had leftovers from yesterday. Fewer serving dishes in the fridge. Tomorrow we are going to have leftover meat and stuffing and I am going to cook fresh potatoes and veg.

Going to my neighbour Christmas day for lunch, we are having a goose crown and lamb wellingtons, we always C lunch together as both alone, walk the dogs and retire to our separate homes.
As I had no dinner to cook I decided to cook a gammon joint for cold cuts, then my other friend who had ordered a boned and rolled turkey joint from the butcher, bought a turkey as her son with her over C, in case he didn`t like the boned joint, gave me a chunk of the boned joint, also she had roast a large beef joint on Sunday, gave me a big piece of left over beef, so now I am over stocked and not an inch of freezer space to be had.
Do I need it or just want it.
  • Hi Chums at youngest DDs until at least Sunday so I am using the time to help her sort her cupboards out and we are menu planning Had a great day with lots of fun at a family party tonight all of us together at her sisters and the boys had a whale of a time .We are quite a close knit family and it was lovely to see them all getting along so well.

DGS Jack has shifts at the coffee place in the presinct until the New Yer so I will be ferrying him to and from work but I don't mind as he is saving every sixpence for when he goes back to Uni .

I had lots of lovely gifts from my family and feel quite spoiled by them :)

Wishing you all a very happy and peaceful New Year
