morning chums ,DD asked me to make an apple pie to take with me tomorrow for after dinner , luckily I have a pack of 6 apples in the fridge which have been there for about ten days or more as I bought them last month and they are as good as the day I bought them having been using up other fruit True they are eating apples and not cookers but it really doesn't matter in a pie
so apple pie it will be I cook the apples for about ten minutes and water to just cover and a good dollop of honey and a bit of cinnamon so its pastry making this morning plus I am also making some millies cookies for tonight at eldest DDs
:) Good job I am an early riser as I am more mobile first thing in the morning

JackieO - I never cook the apples when I make a pie, I just hope them into chunks and toss in cornflour before putting into the pie. I find doing it that way the apple is still in nice chunks, rather than like apple puree, and the water from the apples forms a nice thickened sauce.
Was given a couple of small duck breasts by my friend yesterday as her DH didn't fancy them so will be using them tonight as couldn't freeze them as she had taken them out of her freezer and defrosted them. Decided to have them tonight as I had got fish from the freezer to make a fish pie and didn't want to leave that in the fridge another day! Looking forward to the duck as don't have it very often! Will do it as a traybake with potatoes, carrots, onions, peppers and will also cook some Brussels & peas to go with it.

Luckily being eating apples they stay in slices and I brush beaten egg on the bottom so no soggy bottoms
I also made a couple of dozen cookies some for tonight and some for the boys tomorrow.

I always use eating apples as then there is no need to add sugar.
Doing quite well on th LFHW this, but nothing particular to report.. I am trying to shop less and that seems to be working quite well. Except when DS comes home as he really gets through the fruit...I wanna be in the room where it happens0 -
Have a couple of aubergines which need using up so making a dish my family call "rounders". Layers of savoury mince, different vegetables which are sliced, covered with stock then topped with sliced potatoes and sprayed with oil. Cooked in oven until the potatoes are golden and crispy. Will serve with green veg, probably cabbage & broccoli and possibly peas although might put those in the rounders instead!

Had hm soup for lunch yesterday & it was a bit bland. However crumbled in some blue cheese & added a little more pepper & voila today’s bowl was delicious with a couple of crisp breads broken up & added for texture.
Have plenty left so lunch is sorted for the week:T
Tonight will be lo boiled potatoes sliced & fried with a fried egg & maybe baked beans.

Made a loaf of bread today along with four pizza bases (2 for the freezer).
Hubby used up tikka chicken and salad in his wrap - for lunch.

I have 5 freezers. I was on the way to emptying one of them - it's old and the seal isn't good so I wanted to dump it. But then a couple of days ago one of my other freezers died. :eek:
I thankfully caught it early and most things (apart from bready stuff) were still frozen. I stuffed my other freezers as full as possible. So now all my freezers are so full I have to put cast iron pots on top to keep the lids closed (chest freezers).
Sadly, DH had bought tons of beefburgers (not sure why.....) and we've eaten 4 of them but have about 20 left. They're now defrosted in the fridge (no room in other freezers).
Additionally, I had just taken things out of the freezers to defrost and have for our meals over the next few days. So my fridge is overrun with food that I desperately don't want to throw out.
Anyone have any beefburger-glut recipe ideas?
PS - I won't replace the broken freezer and I'll still aim to get rid of the old one. Three freezers is enough. . . .0 -
Could you make the burgers into meatballs and serve with a tomato sauce? At least it would make another few meals. Alternatively could you give some to neighbours rather than throwing away.

Lunch out - the smallest jacket potato I have ever seen with cheese & coleslaw toppings & a bit of salad. Got home about 7:30 p.m. & have just had a mish-mash meal - lo baked beans & ham with lo potatoes sliced in & 2 fried eggs on top. Very tasty & filled a gap
All my los have been used up except for the still half full pan of hm soup. Lunch tomorrow is sorted & just need something out of the freezer for dinner. However I will sort that out tomorrow a.m. :rotfl:
