    Good morning everyone,

I keep garlic, ginger, chillies in the freezer and just grate/slice from frozen. I don't bother peeling the ginger just use it as is.

Boulangerie potatoes - yum, SG do you think your parents would adopt me?;)

We were treated last night to a visible aurora and fireball shooting across the sky, for once I actually manage to catch a glimpse :D .
No clear skies today though as it's tipping it down with sleety rain and although technically warmer than yesterday it actually feels colder. I'll be happy to spend another day pottering indoors.
I think I'll get another pot of soup on the go as it looks as though it will be soup weather for a good while yet - chicken, veg & rice appeals. Gammon steak & pineapple tonight, I've not had this for ages so really looking forward to it.:)

Lunch was two hot sausage rolls :)
That's the end of that 6-pack as I ate that twice yesterday :)
  • I really like green peppers!:D

I got up late and was going to have a smoothie but decided I wanted something savoury. I opened a can of chickpeas, drained them and sprinkled them with salt and curry powder to roast in the oven.

I'm going to order shopping for Tuesday as I have the T*sspots saver plan for Tues, Wed, Thurs and I got a £12.50 voucher in the post.

I think I will order leeks and potatoes to make soup after reading it on here.:) All healthy stuff this time.

OH, I'm envious now, I've seen loads of things in this world, including a space shuttle launch, but I've never seen the aurora
I did intend going on a Arctic cruise just for that, but the old sea legs are no longer even proper land legs, so that cruise is in the bin:(

    Lunch went as planned

Just got the veg to prep, it's last of the broccoli, carrots & [STRIKE]small[/STRIKE] baby spuds, with salmon fillet fried in olive oil / butter

  • I ate half the chickpeas and I'm saving the rest to make a curry later. I'm going to buy mango chutney and fresh coriander from the shop and use a Loyd Grossman chilli sauce as the base.

I'm going to use cauliflower rice instead of proper rice as I realised I have a sachet left in the freezer.:)

  • I was just looking through the box where I keep my spare change and I've ended up with £40 of change again!

How did that happen when I had loads of change about a month ago? So silly!:rotfl:

I'm also envious of your aurora viewing Caronc :) friends went to Iceland last year and paid to go out to the 'middle of nowhere' late at night to see them and after 2 hours saw nothing although the guide tried to persuade them they were there. Next night she looked out the bedroom window and had a fantastic show for free in the warm :D

    That's £40 for a treat Wednesday :)

I managed to avoid baking today :) i did get the ingredients out to bake but put them all back :A <<polishes halo>>. I made a big batch of minestrone soup this morning using odds and sods of veg so that lunch sorted for a few days :)

Lunch was bacon and egg and a sandwich thin toasted. For dinner I stir fried the last of the steak and made vegetable rice to go with it. There's enough LO rice to have with LO salmon tomorrow night :D. And most of the little odds of veg used up other than the root veg which can wait until the end of the week to use up maybe as a mini roast

    Good evening everyone,
Oh I love roasted chickpeas Wednesday they are so moreish and easy to make. Have you tried chopping some and adding to hummous? I love the crunch they give in that. :)

Farway/Brambling - very unusual here too and typically I miss things like that but the local FB was jumping! The fireball was pretty amazing and travelling so fast.:) It was a very clear night and we don't have a lot of light pollution so perfect viewing weather. I know a few folk that have been on spotting cruises but unfortunately didn't manage to see anything as it was too cloudy.
Weather remains wet & cold though definitely milder than it's been. I've had another quiet day and think I might have an ear/sinus infection building up. Might be time for the Drs if it gets worse. Soup remains unmade as I cba choppng the veg for it, a job for tomorrow's "to do" list. Lunch was toast & pate with the remaining slaw I had made yesterday and a cupasoup. Gammon steak baked with pineapple, roasted mushrooms & toms and a baked spud for dinner. Ear/sinus thingy has not upset my appetite which I suppose is a positive;).

My Mum and Dad are in exactly the same boat as it were. They've seen almost everything that they wanted to see and do except the aurora. They too wanted to book the cruise as they quite like cruises anyway but can't get travel insurance now that doesn't cost as much as their mortgage once did

I hope that you're not getting the lurgy in a worse way Caron! Big hugs x

A busy and productive day here today. I did my usual weekly dust and vac, mop and 2 loads of washing as well as cleaning the upstairs windows. All boring but I feel very virtuous once it's all lovely and clean.

I had a headache this morning which lingered on for most of the day so I only ate dinner this evening. It was beef casserole from the freezer which I had with mashed potatoes and cabbage. Plenty of carrots and swede were in the casserole too. I then helped some ice cream disappear from the freezer. Only to make room obviously ;)

The snow is starting to slowly melt but the pavements are still pretty lethal. Hopefully I won't have to de-ice the car in the morning.
