Cooking for one (Mark Three)

Hot & sunny, but missed out on the thunderstorms lashing around. It was 75F in the conservatory this morning, and the sun is nowhere near yet.

I did get to make the marmalade yesterday, using a Ma Made tin and some demerara sugar as well as white. Not tried yet but the Demerara is suppose to give it that bit extra difference. Nine jars total, but not all jam jars are equal these days

Lunch, more something on toast, it was marmite yesterday

Dinner, another one on rinse & repeat. LO Coronation chicken + salad. I'm making a potato salad using the LO spuds from yesterday

What a difference in the weather here today, the temp up in the mid 20’s which will make for a nice change on the bowling green this afternoon. 

I went to the butcher shop this morning to get some lamb mince for a moussaka, which is simmering on the stove now, I’ll leave the flavours to develop overnight and pull it all together tomorrow.

The butcher has added to his range of sausages, so I picked up a couple of Portuguese linguica which I’ll have tonight with some jersey royals and AF asparagus, hopefully they will be as flavourful as the “no show” tesco ones.

Leftover souvlaki and salad for lunch, all very european here 😎

Overcast but dry and 21C here, that'll do me nicely. 😎

I've a bit more admin to do then the garden beckons, later on I hope to get the remaining toms into their greenhouse pots. Load 2 of laundry is almost completely I'm hoping all will be dry come tonight.

There was a massive thunderstorm here this morning. It went on for a long time, apparently. I heard it but fell back to sleep as I have been out a lot lately and I was tired. I slept in until almost 1 this afternoon!

I just had some yoghurt and fresh fruit and lots of water.

Very hot here today but the office I was in had good aircon 🙌

Sort of tuna Niçoise salad for lunch, assembled it while making last night’s tea as sort of LOs. Chargrilled (on the bbq) aubergine, feta and lentil salad tonight.

Brambling

I did hear a rumble of thunder 5 or 6am this morning not sure if there was rain. Driving through town this afternoon the car was reading 36c although it was only! 33c here, although only a couple of miles from the centre of town we always seem couple of degrees cooler.

I had a medical appointment at 1.30pm so needed to go to town for that, I parked in Sainsbury's which is next door and popped in afterwards I was only going to spend the required £10 for parking I even had a list but considerably more spent, slightly frightening as it was just one bag! I'm stocked up for salads, salad proteins and fruit. The scanning tills were playing up so I enjoyed their Air con for a while as a old boy behind me tried to manplain to me that one of the tills was really working and I was doing it wrong 🙄 it did mean when I step outside it was into the oven of their carpark and then my car it took my breath away.

Feta and peach salad as a early lunch. Also salad for dinner this time egg and cheese, I risked the heat to boil half dozen eggs which needed using i brought a crusty roll to avoid boiling potatoes

At least my Asda order has arrived in the cooler part of today. One sub, well they doubled up on cheese but not a problem, I'd rather have double than none

Picked some of my Boysenberries yesterday, my first crop and taste of them. A very early berry, about same size as a Loganberry but not as tart. I just had them raw, but I bet they would make a nice jam. crumble etc

Food today is cold, apart from a quick blast of Air fryer

Dinner, First try of Asda spinach & Feta parcel [on offer]. Mixed reviews, great or tasteless 🤕. LO HM potato salad plus usual salad bits

Good morning everyone,

Bright and warm here today. Apart from the routine chores I'm planning to do a lot of not very much today and enjoy the good weather before rain and 27C arrive tomorrow. My kitchen/conservatory get so warm that I've added a cheeky Tesco delivery and meals dinners for the next couple of days will be picky bits that either need no or minimal cooking. Not the most MSE way to feed yourself but I took advantage of their Meal Deal and 5 for £12 deli offers so not hideous for the two of us either! It's my birthday and DS2 was going to cook a steak dinner for us but I decided to put that on hold until it cools a bit. Tomorrow's planned sausage and butterbean stew has been kicked into touch too lol!

I slept on top of the duvet last night with just a lightweight throw over me which was much better and thankfully it’s slightly cooler here today.

The butcher’s Portuguese sausage was absolutely delicious and definitely on my buy again list. Today’s lunch is avocado and seafood stick salad with crusty bread.

Tonight it’s moussaka and I’ll just have some raw shredded cabbage to go with it.

I had a yoghurt and strawberries for breakfast. I went out to my appointment and then had a cheeze and tomato roll when I got home. Dinner is air fried tofu with rice and veg. I'm going to have ice cream afterwards as it is so hot.
