Another grey damp day here, kinda glad I have no reason to go out.
Whilst tidying a kitchen cupboard I found a pack of desiccated coconut, BBE Jan 2024
cant even remember what I bought it for. But I’ve successfully made some coconut milk and got a pot of sweet potato and coconut soup on for lunch. Dinner tonight is a use up of small pots of stuff that are lurking in the freezer; some thick hm curry sauce that I’ll water down with more of my hm coconut milk and throw in a handful of cooked chicken and peas and have that with half a naan and rice.

I have some coconut too as I bought it for sprinkling on smoothies and then totally forgot about it being there! I didn’t think about putting it in soup, but that would work.🙂
I just had a slice of thick white bread with red pepper houmous.2 -
I soaked the coconut in hot water for a while, blitzed it in a liquidizer then drained it through a fine sieve before adding to the soup because I thought it might have been a bit grainy.Wednesday2000 said:I have some coconut too as I bought it for sprinkling on smoothies and then totally forgot about it being there! Evening all!
Sunny day here in Berks. Went to brunch with a new social group. Had a fab time and met new people which was nice.
I had a small full English breakfast whilst out and haven't been hungry since so, if I am peckish later, I may have some soup or crackers and pate.
Tomorrow is my chores day which includes batch cooking, making the most of half price electricity from BGas! Planning on making a batch of thai red chicken curry soup and canning/bottling it for easy meals at other times.
I've also scored some YS mushrooms, celery and leeks so need to process those for longer storage. I will be busy tomorrow!
ETA I did feel snacky so I had a homemade lentil soup from the cupboard along with a M&S crusty roll and butter
Putting these winter preps here so I don't forget!

Lazy day today, although I did move laundry round and do a mountain of washing up! Ventured out this afternoon for a small ish grocery shop and got the car washed while I was out.
Beans with toast for lunch. More picky bits while watching strictly tonight.1 -

Good morning everyone,
It's tipping it down just now but supposed to clear this afternoon.
My sis is popping over in a bit for a cuppa but apart from that I've not much planned. Will probably make some soup for week day lunches as my freezer stash is depleted and we're using the two remaining portions of chicken and chorizo soup for dinner tonight. Cottage cheese, spinach and egg salad with a mini M&S sub roll for lunch.1 -
It is a gorgeous day here. Very bright and sunny and warm. I have run out of bread so I can't have my usual toast! I have some leftover red pepper houmous so I might have that with carrot sticks and crackers for lunch. I am going to make a mango, orange and banana smoothie too.1

Wet and grey here again and sadly looks like it's due to continue for most of the week.
I finally got around to dealing with a pile of paperwork, some filing and shredding so the place is looking a bit tidier.
Lunch was more of the soup I made yesterday and a couple of portions for the freezer.
Dinner is a lamb leg steak, mashed potatoes and brussel sprouts.
