The early frost last night had been washed away by the time I went to bed 🙂 and it has rained most of the day.Back at work
(still from home) with loads of emails and the usual beginning of the year chaos. I rejected 3 calls on Teams from a Dutch colleague as I was already in a meeting and he messaged to tell me to drop off as his was more important 🙄 I made him wait and actually it wasn't 😡 everyone thinks their work is more important and this close to annual review it's the boss 😁
i was feeling light headed this morning, hopefully due to not eating correctly or sleeping well and not as my cheerful sister suggested the start of a chest infection (she's on her second dose of ABs as the steroids didn't work for hers) I'm still coughing but my chest isn't 'rattling' so I don't think it is
i had a portion of the soup I made yesterday for lunch. Dinner was chips from one of the jacket potatoes I cooked yesterday with posh fishfingers, runner beans and broccoli so I've made the effort to eat better todayLife shrinks or expands in proportion to one's courage - Anais Nin2 -
Hello. Does anyone have ideas of things I could have with peanut butter instead of bread? I have ryvita, which I will also be giving up when the package is finished, some old apples I can slice up and "butter", and some carrots I could dip in it. If the Co-op is ever stocked with eggs again, I can make banana pancakes, and I could have it with porridge. I can't eat wheat flour/pastry/pasta, but I do have a bag of almond flour to experiment with. I am otherwise stumped!
Having said that, this actually seems like a decent list now I write it out! But any other ideas would be appreciated. I just miss a good peanut butter sandwich so much!1 -
Hi CharleyStone does it have to be as a sandwich alternative I add it to vegetable stew or chilli just a couple of tablespoons to 4 portions added to the veg when you start cooking it makes a tasty sauce. Or I make a coconut and peanut sauce works with chicken as well as the tofu in the recipe below

Or if you like celery it's nice added in the 'trench' of the celery as a snack or do you eat rice or gluten free oat cakes

Thanks, Brambling, both of those recipes look great, although I would have to cut out the chilli flakes for the sauce too. It doesn't have to be a sandwich alternative, I just like the peanut butter flavour and texture, and would rather have it as part of a meal than just gobble it up with a spoon! I like the idea of adding it to stews as well, and although I don't buy celery often, I do like it, so that is definitely something to consider. I eat rice cakes, and I'm trying out some Kallo lentil cakes at the moment that it might go nicely with, so thank you for all your suggestions!1

Dull but very mild this morning, did go looking at Home Bargains but nothing there to tempt, so finished up in Mark's as I expected to beAt last their Brown sauce, bog-standard version, is back on the shelves, one of those, plus a large cauli, 95P not as cheap as they have been, but it will do for C Cheese later this week, there were lovely YS Scottish lamb steaks, but I resisted because I'm trying to run my freezer horde down, not adding more to itPlus eggs & milk, a very mundane shop, but it's all I need this weekLunch, repeat of yesterday, use up & clear out of OOD tin of spaghetti on a stale crust, toasted. With a couple of Use Up eggsDinner, the very last & final Parsley Box RM MFO, lasagne todayI'll not buy any more, very handy, but I think I can do better with either tinned or frozen RMs.I have the RMs around because of difficulty prepping with gouty hands / feet plus those CBA days, talking of which my foot heel is better now, that Allopurinol certainly is making a big difference Brambling, took a while but now does the job for me

Miserable here today though the wind has eased a bit. Still feeling chilly despite it actually being much milder.
After coming up for a month of a painful back/hip pain which hasn't got any worse but isn't getting better I've decided to book a private physio appointment and see if they can give me some relief. They worked wonders after I fell a few years ago so fingers crossed.
HM soup for lunch. Lasagne, salad and garlic bread for dinner, using up a tub of ragu from the freezer and some surplus milk.0 -

It doesn’t feel like Wednesday does it? Did my usual Wednesday offsite meeting this morning and then home for a lateish lunch of posh fishfinger sandwich.
Swimming again this evening so chickpea and chorizo stew from the freezer for a quick reheat tea when I got in. Chucked a bit of frozen spinach in too and dug out a lump of sourdough for dunking 😋0 -
Evening all. @CharleyStone I make a (not yet perfected) curry sauce with peanut butter and coconut milk. I also sometimes have a dollop in some yoghurt for breakfast. I try soooo hard not just to eat it from the jar!
A quiet day at work (from home). I work for me and have meetings set with lots of clients next week, I wanted to protect this week a bit rather than dive back in. First session at a local choir yielded an unexpected sweet treat, it seems one member bakes each week!
breakfast - Greek yoghurt, sesame snaps (the last shop bought, I have to somehow separate the ones I’ve made from each other…h)
lunch and dinner exactly the same as yesterday - HM soup, babybel and seeds // pasta with aubergine sauce and broccoli
snacks - raw mushrooms, muffin at choir and a square of stollen now I’m home

Having sat up half the night with asthma I seem to be coughing less today and the light headed feeling has gone 🙂 I was happy that work was quiet today 🙂 I did finish at 5 and had a quick nap before popping out for a couple of hours
