    That soup was so nice. I just had the leftovers. I also added rice when I cooked it and so it was very thick. I like a few of Nigel Slater recipes. I know I used to make one regularly. I think it was a stuffed, roasted butternut squash. I will search for it online.

  • Hello all, may I join in your lovely thread? I’ve been reading for a while but not contributed - I love cooking and meal planning at the weekend but can’t bear either during the week, I just end up standing in the kitchen eating nuts while trying to decide what to have for dinner. 

    Today has been a meal plan and cook day ahead of first week back at work (from home). 

    I’ve made four portions of tomato soup with passata and tinned tomatoes from the out of date shop, plus roasted carrots from the freezer and a few limp spring onions. That’s lunch for a few days and a delivery to a neighbour who has covid. Fridge is once-a year-cleaned out and ready for my once a month supermarket delivery tomorrow.

    I’ve also boiled four eggs to top ramen later in the week, and to take on a planned walk on Friday. And I’ve made a batch of sesame snaps as an experiment. 

    Breakfast was two stollen squares in Greek yoghurt.
    Lunch was a tofu/lettuce/gherkin/ mustard pitta bread with some multipack crisps 
    Dinner will be a baked potato (15 minutes microwave, 10 mins hot oven with some veggies cooking for later in the week too) with cheese beans and veggie bacon

    Hi Eskarina 👋

    It's been a nice day here although the temperature has dropped and there was frost on the cars when I put the bin out at 7pm I haven't put the windscreen cover on my car so I'm glad I'm not driving to the office 🙂

    I attempted to sort my wardrobes this morning but ended with only two items for the charity shop, I know there is a lot more I no longer wear so will need to go back once this lurgy has gone, at least they are now tidied 🙂

    Following on from yesterday's using up veg I made a big pan of mash potato for the freezer as well as 4 jacket potatoes.  i also made a batch of Tescos Nana Magic Soup 😋 as I had all ingredients in and the veg needed using

    i had intended to menu plan and write a shopping list for next week but nothing really springs to mind as my appetite is still off, I try again tomorrow

    I had such a craving earlier for a lettuce and mustard sandwich! I didn't have any lettuce in the house as my shopping is being delivered tomorrow night.

    Nearly back to normal here. Home from last lot of visiting, meals planned and grocery shop done. I decided to leave the tree up until tomorrow and enjoy the lights this evening 🎄

    Beans with toast for lunch and tuna and artichoke pasta for tea. Have made a batch of Thai butternut squash soup, mostly for the freezer but will use one portion on my one day in the office this week 😋

    Raining again and in for the week, apparently. Hope it stops a bit tomorrow because I hope to get into town and mooch around Home Bargains for garden bits ideas, and some spuds, fresh veggies. But may finish up in Mark's 'cos "my" HB fresh veg is a bit grotty sometimes

    Pondering on lunch, but will copy JKS with beans, or maybe tinned OOD spaghetti, on toast, use up the stale bread while I'm at it
    Dinner, still use up, today is Parsley Box cottage pie, depending on how I feel I may bung frozen veg alongside it, I have some Mark's posh frozen mixed veggies

    Good morning everyone,
    Welcome to CFO Eskarina 
    Wet and grey here today with a weather warning for torrential rain later. Much milder though it doesn't particularly feel it.
    DS2 is back in his "office", Hector was funny this morning as he didn't want to get up and was most put out that DS2 was up and about!
    Decorations are down, tree is ready to go to the dune restoration project this weekend and crockery etc. all put away. The place looks very bare.
    Started on the fridge tidy yesterday but ran out of oomph so will continue that today.
    HM leek, carrot and cauliflower soup for lunch made using up various LOs. Griddled chicken breast tonight with rice & beans and a salsa type salad. Based on Jamie Oliver's bejewelled pork recipe.

    I just popped out to Tesco to buy a few bits. I bought carrots, strawberries, porridge sachets, oat milk and some YS caramelised onion houmous.

    I had houmous with carrot sticks and two slices of toast when I got in. It is a horrible dark, drizzly day out there. Typical January.

    and @Wednesday2000 - I hope you enjoy your lettuce and mustard sandwich when you get it! It’s a favourite of mine.

    it’s wild, wet and windy here - I’ve not left the house all day and the cat almost took the catflap off the hinges barrelling back in after a comfort visit. My Xmas tree still up - I have a hot date with the tree chocs on Friday night!

    Breakfast - a pre Xmas purchased soft (soooft) banana and a pack of chocolate oatcakes 
    Lunch - a portion of the tomato and chili soup I made from the out of date shop finds, with a babybel and sunflower seeds. The soup is so good!
    Dinner will be pasta with an aubergine sauce I was given *last* Christmas with steamed broccoli and a salad to make it feel like more. 
    Snacks of raisins today - I like to have fruit every day and have loads in tins and dried so am trying to remember to eat that at least half the time.

  • Phew, day one done - think it gets harder every year 🤔

    LO tuna and artichoke pasta for lunch. Scrambled eggs and mushrooms on toast for early tea before swimming. Had a crumpet with my cuppa when I got home. 

    Really hoping I sleep better than last night…
