    I hope the rain has stopped Caronc we've been lucky as the rain stopped here first thing 

    not CFO for the next few days, his lordship is not amused that we have a visitor, he has mastered the 'oh are you still here' look 😁

    We were catching up late last night with a very nice bottle of Chilean red so lazy morning today. Lunch was cheese and Parma ham salad with crackers.  We walked up the garden centre after lunch for a wondered around and I picked up a birthday gift at their forge for another sisters 60th 🙂

    I cooked the AH ginger and coconut chicken for dinner although I cheated and used a sachet of coconut rice.

  • Hmm, seem to have lost a day…I blame the head cold…

    Manic office day yesterday but had planned for it so took courgette, feta and harissa couscous in a lunchbox. Nice, easy salmon with broccoli and pesto pasta last night.

    Miserable, rainy day today but wfh so no need to leave the house. Managed to catch up from my couple of days off (seriously where do all the emails come from?) and do some actual work 😊

    Scrambled eggs and mushrooms on toasted bagel for lunch and tonight I attempted to use up the halloumi and Serrano ham by wrapping slices of the first in the second, served with chargrilled courgette and harissa couscous. Was yummy but still a bit each of the halloumi and ham left 🙄

    MIA yesterday, my internet & phone went down early on, the folks repairing a line furthe down the road managed to cut my line as they filled the hole in from the repair. They had legged it before I twigged so had to phone my ISP. Luckily it was not just me affected so Open Reach lady phone fitter turned up PDQ, I guess the switchboard was lighting up with faults by then. All fixed now

    Due to repairs and general faffing yesterday's meals were sausage sarnies and some bread pud I made
    I managed to get access to my unstable old computer disc and the images and documanets are accessable and copied over to an external drive for extra safety

    Booster jab earlier this morning, then collected prescription and into Costcutter for a YS mooch, one YS fresh chicken £2 and a couple of YS crusty rolls for lunch of cheese & cuc

    Dinner, I'll cook the YS chicken, and if room in oven, at same time the Asda 3 for a tenner roast in a bag one
    One for today + LOs and other to divi up & freeze for another day
    Dinner today is thus roast chicken and not sure, could be salad or full on roast, see how the day pans out

    Good afternoon everyone,
    I'm pooch sitting again today as my sister is getting some tiling done. He's "helping" DS2 with some drawings just now.
    Thankfully the rain has finally stopped, well for just now anyway, there's apparently more on the way.
    Put together 6 tubs of pigs in blankets yesterday to stash for Christmas, that should keep the boys happy!
    Bacon butty for lunch with some spare streaky and tonight we're having spare ribs from the butchers which are more like chops than ribs!
  • Quiet day today, ventured out for food shopping when it finally stopped raining but have just pottered around other than that.

    Lunch was veg chilli with a toasted pitta bread and tonight I treated myself to supermarket takeaway - crispy prawns with sweet chilli sauce and egg fried rice, did stir fry some broccoli to have with it 😋

    Emails multiple when you turn your back JKS 😁 I'm not looking forward to going back to work on the 8th 😬

    I woke to heavy rain this morning which stopped as soon as my hair appointment was cancelled 🙄 the rule is generally the more expensive the hair cut the worst the weather.

    my Sister and I went for a wander around town this morning before meeting my other sister for lunch at one of the Turkish restaurants in town, very nice and a very large portion 🙂 during lunch I was talking into going back to the shoe shop to trying on some boots I was lusting after.  I'm blaming the manager as I wanted the ones she had on 😁 I have to wait until Thursday for my size in the colour I want 😁 

    I was still too full for dinner but did have a glass of red whilst watching strictly

    Clocks back with very wet & wild weather overnight, still dull, wet & blowy out. The blackbirds have started stuffing themselves with my pryacantha berries so i'll enjoy the berries while they are still there

    The double chicken roasted in oven worked out fine yesterday,only  just fitted in but fit they did. I had slices with AF Harry Ramsden frozen chips, very CBA and tasty

    Later this morning I'll portion up the roast chick and freeze the leg quarters.leaving the rest for meals today and next few days. I have fresh mushrooms and the possiblity of chick & mush soup looms, I'll ponder that for a bit

    I left a loaf on the timer in the Panny overnight, so awoke to one fresh loaf for lunch, it's a chicken sarnie of course
    Dinner, more chicken, not yet decide how it'll be served

    I'll also divi up the fresh bangers for freezing later today

    The list of dead electrical items is spreading from my PC to DD's TV and DS's coffee machine. Very first world

    Good morning everyone, 
    Sorry I missed your post yesterday Farway, glad you got your internet/phone connection restored.
    And the rain has returned! It's absolutely tipping it down and windy as well. I doubt they'll be much guising later unless it lets up. I'll pop some sweets to the kids next door later and then shut the storm door as I don't want any random door knockers.
    I've not much planned for today. I'll make a pot of soup this afternoon and sort out dinner, tonight we're having a small piece of lamb. The spare ribs from the butchers were superb, far from cheap but worth every penny.  :) 
    I slow roasted them in some bottled peri peri sauce and we had them with baked spuds, corn cobette and a flat mushroom.

    I’ve just resurrected my old slow cooker, I’ve tried a small cooked ham and a few chicken thighs and they tasted lovely, especially the chicken.

    Tell me though if I slow cook 8, 10, 12 thighs  at once can I freeze them and use them later as required? Any special advice or precautions I should take eg  if I wanted to do a sweet and sour or a lemon chicken?

    As always thanks for any advice.

    Hi Kevin, yes you can, thighs freeze and reheat well. Just make sure they defrost fully before adding to the dish you are cooking and that they are thoroughly reheated. If you are cooking for yourself just be mindful that food safety guidelines advise you should only reheat cooked meat once so if dish two e.g. sweet and sour is likely to generate leftovers it might be better to make a batch with uncooked chicken and freeze in portions so that any leftovers can be reheated safely. 
    Hope you are using up all the lovely stock slow cooking ham or chicken makes.  :)
