    Ooh cheese n pickle toastie sounds fab CARON! I sometimes do a cheese n mango chutney one, very tasty 😋
    Am making a 3 bean chilli today, n celery soup, which will last me a few meals .
    I've zero freezer space,  so need to eat stuff within a few days.
    It's very icy here today , brrrrrr 😯😯

    Good morning everyone, 
    I ended up having soup from the freezer instead of a toastie CG but cheese and mango chutney sounds delicious. 
    Dry but cold & grey here today. My Tesco order should arrive soon and once it's sorted out it's back to tidying out the larder cupboard. If anyone needs red lentils give me a shout as I've discovered I have two huge bags of them!
    Sarnie or toastie for lunch as I've exhausted the freezer soup stash and dinner is tbc. My son will get his usual Friday chippy and I'll raid the freezer.

    Sunny & bright today, cold though
    My ECG monitor thing packed up early, screen went blank yesterday lunchtime so it's fingers crossed the info has not been lost & I have to do it all again, not that it would be hardship, just delaying progress

    Caron, those meals sound very nice. I have a lump of LO ham but no leeks, however the frittata idea could be basis for hammy dinner tonight
    Lunch, again following the trend, cheese in PB baguette, but thinking with salady bits before the "new" Iceberg follows the go manky trend in my fridge
    I also think a celery soup is on the cards using the subbed celery sticks
    Or, maybe creamy ham & spud soup using the celery?

    While I was typing I have decided on the soup option for dinner, and maybe use the other PB baguette for dunking?

    UPDATE - Another call from Dr's this morning, I now have a covid jab booked for PM Wednesday, local health centre less than a mile away :)

    I did make the creamy ham & celery soup I have tried a sample and it is extremely yummy, the best way I can describe it is as nice as posh tinned. <3
    I know HM is better than tinned but somehow I have recreated one of H's creamy soups without any mystery ingredients, probably never to be repeated due to my bit of this bit of that cooking style
    Cooling and maturing on the stove top at the moment, I'll heat it through for dinner, bet it will be as filling as a stew, it's nearly as thick

  • Good evening (waves), long term lurker here. I used to post on the weekly meal planning thread as I love a plan but as that no longer exists, and I only cook for me, CFO seems like it should be my new home :)
    I love cooking (and more importantly eating), I used to enjoy food shopping but am a full on convert to online grocery shopping, and I am literally always thinking about the next meal (this has only got worse in lockdown...)
    So, the plan said Thai chicken curry tonight, so that’s what I had - using bought paste and leftover roast chicken that I froze last weekend. It wasn’t half bad, if I do say so myself!

    Caronc Maybe Dahl or a tomato and lentil soup to top up freezer supplies to off load the lentils 🙂 at least it is the weather for some rib sticking food

    Good news re the jab Farway and not too far to go, my eldest sis and bil had to do a 25 mile round trip, but were just glad at the thought of no more shielding. I hope your family are doing ok  

    lunch today was a portion of braised celery soup from the freezer, it wasn't label so it was a surprise 😮 with a slice of cheese on toast.  I forgot to take something out of the freezer for dinner and couldn't find the fish fingers I know I have so dinner was omelette, AF chips and green beans definitely at cba day as will tomorrow as I'm working and the end time can be flexible 🙄

    Littlemoney I have a electric pressure cooker and the recipe for 4 portions is
    25g butter (I use a little less)
    100g puddling rice
    50g sugar (I do cut this down)
    700ml milk
    grated nutmeg

    Use rice function and melt butter, add rice and sugar and stir to coat the rice, add the milk and bring to simmer.
    Press Cancel
    close the lid and set to 12 minutes on rice setting
    remove lid and sprinkle in nutmeg
    simmer for 1-2 mins to thicken 

    I have been know to mix the milk with coconut milk 😋

    Welcome justKs, I'm sure you'll fit in here as you are aware of the many styles of CFO
    Brambling, I keep hankering after an auto type of pressure cooker.
    I do have a large Prestige type stainless stove top one but it's right at the back of a cupboard, and no doubt lid seal would need replacing by now, plus I suspect it would be too heavy when full for me these days
    On my win the pools list is a Ninja thing but only having recently bought an air fryer to replace the busted Actifry I will just have to think about it, maybe if I were a keen cook but I'm not

    Today's meals are uncertain, not much a planner, I never took the the mince out to defrost so that plan failed :(
    I have made a ready mix loaf in the Panny, lunch is thus a sarnie, probably cheese & salad bits
    Dinner, could be LO HM celery & ham soup, or could be try the Richmond vegan sausages with eggs, HM AF chips & open tin of beans
    If all fails I have some LO cold pizza as CFO emergency rations ;)

    I've never cooked rice in my pressure cooker, I usually use the slow cooker which works well. My recipe is pretty much the same as Brambling's but I often replace half of the milk with a tin of evaporated milk. It makes it lovely and creamy.
    Larder cupboard clear out is just about completed just the tinned goods shelf to go. A few ends of things that were lurking at the back and very OOD have been ditched but there was less of those than I feared there might be!
    It's a manky day here, no snow but windy and heavy sleety rain.
    Bacon & tattie scone butty for brunch and HM pizza for dinner tonight.

    Thanks. I have an old prestige pressure cooker. I wonder how long I would need to cook it for and with what weight on the top to be the same as a "rice setting" for 12 minutes. As four portions would be too much, have you successfully reheated the rice pudding. I remember years ago my mums bwas very solid when it went cold.

    Exciting day today - left the house for the first time since about Tuesday, and there was enough ironing to be worth getting the ironing board out  :smiley:
    Chinese pork belly slices with rice and stir fried baby sweetcorn and sugar snap peas tonight.
