    Well I tried the pulled jackfruit recipe.

    Verdict - it comes under "Well I ate it" territory imo. I can see that pulling apart bits of jackfruit gives similar texture to pulled pork. But - it's been literally decades since I ate meat to remember what pork is like and I don't think it's very much like that personally. Recipe not quite according to plan - as I forgot to get passata out of my freezer in time to defrost - so had to use canned tomatoes instead.

    I've got a bit of a suspicion that food that is meant to be 'direct substitute' for meat or, come to think of it, the vegan "cheese" equivalents are a bit of "wishful thinking" imo.

    So - I've got another helping of that to eat (the usual blinkin' "having to halve a recipe for 4 and eat it two days running" malarkey:() and I think I'll have it with baked potatoes basically.

    But I don't reckon I'll be having that again...
    That's a shame, I hate when you have made something full of promise that disappoints.
    Being neither veggie or vegan I generally don't feel the need to sub meat/fish/dairy with "lookalikes" but over the years have eaten a few and generally have never been that impressed. I like nut mylks, bean chilli and decent veggie burgers etc. but think they stand alone rather than a sub for dairy/meat equivalents . I enjoy veggie/vegan food and I can see why someone who is veggie/vegan might want to eat these but personally I'd rather have something that wasn't pretending to be something else IFYSWIM. (And I'm just going to contradict myself and say I love meringue made from aquafaba - like French verbs there are always exceptions :D)

    I must admit I am really lucky with my local authority Caron, I renewed my blue badge online with absolutely no problems, including taking a selfie sat in my lounge chair as well.
    Blue badges are so, so useful, although at my local A!di they appear to be an optional extra for those using the designated spaces.

    I succumbed to temptation today and made several cheese and ham toasties. They were blissful. My new toastie maker does a very good cut and seal. The ham was A!di's trimmings, very good for this purpose as it's proper ham, but the fact that it's in bits is hidden.

    My LA is infamous for not being "quite with it" so I'm not actually that surprised tbh:eek:. Yes it will come in handy as I suspect my son is a [STRIKE]lot[/STRIKE] bit fed up trying to get as close as possible to where I need to be when there are lots of disabled spaces free that we can't use but if I'm honest with myself I've been dragging my feet getting one ....:o Still 'tis done now:cool:.

    A "proper" sealed cheese & ham toastie sounds good to me:D

    Beetroot gratin is definitely one to try, maybe the dauphinoise too but without potatos as I don't eat them
    Darn that's just reminded me I've got spinach in the fridge I meant to do that with

    - but spinach can be wilted down into a variety of sauces (eg the "bolognaise" type sauce I made today). It's not that noticeable once it's wilted down - but one still gets the goodness from it.

    Beetroot - I'm not a fan of beetroot and therefore to me it just equals grated beetroot in salad.

    Courgettes - these days that often tends to spell out courgetti in my book (ie using courgetti instead of spaghetti).

    Cauliflower - roasted cauliflower, cauliflower rice, cream of cauliflower soup.

    Grapes - if not sure immediately, then stick them in the freezer and eat them straight out of it. Little flavour "pops".

    Spinach usually gets added to things, sometimes smoothies if I've forgotten it's in the fridge :rotfl:

    I make cauliflower rice a lot but not tried it roasted yet and I keep meaning to try courgetti but forgetting until after I've thrown it in a soup lol

    I had no idea you could freeze grapes but I've just put half the punnet in now so thankyou :)

    this sounds fab, my lunches are often roasted veg and tuna with betroot hummus, this sounds a great alternative for a topping

    Caron - I'd settle for your local authority (or anyone else's local authority in the country - except one other I can think of). It is possible for a local authority to be both inefficient and a lot worse things than that ...and I'd rate them as "Probably the worst or 2nd worst in Britain". Swop ya':rotfl:.

    I suppose I ought to check the weather today to see how much clothing to put on - reckon it'll probably include thermals:(. Might even include a hat (though I've basically still not been able to persuade myself to wear one since moving here - so just get windblown and colder:cool: - but must look one out this time). Off to do "Latest Community Activity" today bar it "belting it down" (I have my limits...:cool:) - of litterpicking. No-one can say I don't "do my bit" here LOL. So I guess dinner today will be the 2nd helping of that "sorta bolognaise" - it doesnt sound appetising to me - and served up with baked potatoes.

    Yesterday, in the end, was a bit of a CBA day food-wise. I started with a tasty/filling cheese omelette/chips/beans, so didn't feel hungry ... so digestives were pecked at (2x2). Then, quite late, I thought "better eat something else I'll wake up in the night hungry" and I made a cheese/tomato sandwich.

    I put just over half a loaf into the freezer as it's got today's date .... I do begrudge wasting valuable freezer space on bread and I do miss the accessibility of "fresh bread" (defrosted it's not the same is it).... but that's the CFO life.

    Have to leave the house for 1-2 hours at some point today.... so I expect to pick up something random and unexpected to eat in a bit.
  • I must look up my gold cake recipe in my blue book, to see how many yolks I need, I want to make a lot more granola today. It is a `go` to` for me now, not just breakfasts but a pudding topping with a bit of yogurt and it needs egg whites for binding

    Breakfast was a medley, granola, hemp, cacao nibs. dried raspberries, walnuts. Lunch will be a hm pizza as I bought long sweet peppers especially for pizza. High tea will be rice, dried soya etc lots of ginger and veg added before it finishes cooking. Its very calming on my stomach and calm stomach= good nights sleep. Last meal yesterday was nut roast and veg medley and I slept 8 hours through, love that sort of sleep

    Break time am will be peanut butter on toast. Break time pm perhaps a scone. Fruit on a plate in between all that

    I am going to enjoy the sun indoors today, I know it will blaze in and make the room feel very cosy and warm. I think I will read today, maybe dust for something to do and fantasise about maybe trying to get a cottage after being in dd`s` bright rented calming cottage yesterday

    - Just checked latest email from Pinterest of the boards I might be interested in. I collect suitable weekly meal plan pins for myself - and remembered "Hang on - they do a lot of clean eating meal plans" and thought you might be interested to take a look at that.

    Pretty often meal plans will come complete with a shopping list.

    NB; Always wise to read the article the Pin is for first in case. I was all set to save another meal plan pin this morning and clicked through to the article and it featured the 2 women doing this. Quick look at their photo - and I didnt save it after all (ie decided their meals might be fattening - as they're plump).

    And double the portions they say it's for.

    A portion is: Half what you think - and a quarter of what you'd like it to be :)

    It looked like a nice day ..... apparently to create new hanging garden sculptures for free!

    It started out fairly normal: Look out of the window, ooh look sun .... do a lot of hand washing and hang knickers and pillow cases and a couple of T shirts on the line .... back inside doing more hand washing and I thought "I'll pop out there and give those knickers a pull/flick/move around so they dry a bit quicker" .... trotted out and they're frozen solid, on the line, in the shape I originally hung them in.

    Bummer. I'm sure they'll defrost in a bit :)
