Chicken in creamy tarragon sauce with ratatouille and celeriac chips. Made the chicken meal and froze last week but not smashed out on it as used some keto thing (xanthem gum) to thicken and texture is a bit slimy but needs eating so pairing with nice sides to hide the yuckiness!
Xanthan? Welcome to my Coeliac world of gluten free :)

Tonight will be wild atlantic salmon fillets with a wasabi mayo & crunchy breadcrumb topping, new potatoes & green beans pepped up with some garlic.  Banana & salted caramel ice cream to follow. Mostly from the freezer which is being run down prior to house move :/

We had takeaway fish and chips again. 2 children's portions, but husbands fish was huge.  Really well cooked again.
They were so good last week that we treated our parents to some, unfortunately they have to eat at 5o'clock on the dot,  so had to go twice, once at 4.50 and again later for us.
  • A help-yourself fajita mix of chicken/peppers/onions, taco beans, spicy rice, sweetcorn, salad and grated cheese to add to wraps tonight, with a choice of mayo, sriracha, avocado and/or salsa.

  • Am slowly but surely getting back into my normal routine after being completely thrown off over the last fortnight or so and have started cooking again.
So, yesterday, I made Delia's leek, carrot and potato pie using y/s milk, butter, carrots, potatoes and plain flour. The recipe comes from her Frugal Food which I bought from a charity shop earlier this year. I ate it with y/s brussels yesterday evening and y/s brussels and tenderstem broccoli tonight.
