Chicken & Chorizo Jambalaya from BBC Good Food. Absolutely delicious. The icing on the cake is that you just throw everything in one pot and leave it for half and hour, then it's done! I actually just tried a veggie version. Threw a whole bunch of veggies (tomatoes, courgette, mushrooms, peppers) in without the meat and it still tastes fantastic.
jambalaya is one of my favourite 'end of the week' meals, I use any veg left before shopping and any odd bits and bobs I find in the freezer. I agree it's really simple to make and very tasty.
tonight i'll be having more of the bean, tomato and spinach casserole. its a bit like baked beans but without the sickly sauce you get in tinned beans. yesterday I had them with chips, tonight I think a jacket spud is called for, maybe with some cheese0 -

Lunch today will be cheese on toast with Worcester sauce and a side salad of some celery that needs using up. Supper this evening will be Black Pudding and Bacon casserole with mushrooms in it, mashed potato and spring greens followed by blueberries and plain skyr and a cup of black coffee.0

All ok at the retinopathy thanks...just have to wait a few weeks for the results, am sure it will be fine.
Lunch today will be a ham sandwich. DS is home from uni tonight for a 'reading week' so we'll be having homemade chicken curry from the freezer, bombay potatoes, pilau rice and I'll make some naans as well. He probably needs feeding up.. :rotfl:0 -

It!!!8217;s been a long, tiring week and I needed a treat tonight
I usually shop at markets, farm shops, butchers and Aldi but I needed a few bits from a mainstream supermarket (for e.g. I had run out of Geo Watkins Anchovy Sauce) and I had a voucher for 30% off Ocado and free delivery so .... on top of the specialist bits I needed, I ordered their £10 Chinese New Year meal deal (which cost me £6.67 for two mains and three sides). It!!!8217;s just been delivered, and the oven is on. Cheaper than a takeaway, but still a lovely end-of-the-week treat!
