I am making Jamie Oliver's Mediterranean Lamb without the coucous and with rice and peas instead and brocolli. I always add a courgette to it as it seems like the missing ingredient in this recipe. Its in the oven now, smells lovely.
Last night's dinner was horrible. I cooked hm potato wedges, sausages and baked beans. The potato wedges were lovely but I burnt the sausages - they came out of the freezer so I thought they would take a long time. We still at them though.The forest would be very silent if no birds sang except for the birds that sang the best0 -

Tonight was the last of the veggie chilli. I had mine with some cauli rice and I made some flat breads with gram flour. Jury is still out on those, I think I prefer normal flour but was trying something different and gluten free for OH.
Still have to sort out the lamb I roasted last night (it is in the fridge). I also forgot to make the sauce from the juices so the roasting pan and a

Change of plan last night. Had an aubergine and some courgettes to use up and found a new recipe to try - Mediterrean layered vegetable bake. Think it would have been really nice if the timings in the recipe had been better! Neither the potatoes nor aubergine had cooked properly, so basically ended up with courgettes and a tomato sauce topped with a cheese sauce covered with some parmesan and mozzarella which was very nice but not really enough to eat.
So tonight will be the shredded duck & pancakes.0 -

I'm making curry and rice tonight, I've bought some onion bhajis and poppadoms and will serve with home made raita and chutney.

Got a couple of ready cooked sausages out of freezer and will have sausage sarnies for lunch, also got a pack of Asda chicken fahita ( ) out so will cook that maybe for dinner, mainly because its a large box and I need some room in freezer and when cooked will take up less room as will be portioned and eaten.0
