Bought some pork belly slices and was going to freeze but have decided to use 2 today with mushrooms etc as a sort of none-chicken sc casserole, will be enough for several meals which will go in freezer to have after my up-coming operation.0

We are having St Jacobs which are sliced ham and cheese dipped in breadcrumbs and then you can fry or grill. I will grill ours. My daughter loves them and were 50% off. Will serve with sweet potato fries and sliced tomatoes as they need using. Grapes and apple after

Tonight will be my own version of Chinese, after last nights disappointment, Mongolian Beef with stir fry veg and rice noodles, was going to be roast lamb, but youngest is going out and not worth it for 2, might do a scaled down version tomorrowNote to self - STOP SPENDING MONEY !!

Made pork belly slices and mushrooms yesterday, cut the skin off and made crackling which I ate whilst making soup for freezers. Ate a portion of meal, lovely, enough left for 1 meal and will have that today. Used asparagus as the extra fresh veg, no potato. Have cabbage to use so that will be fresh veg today.0

I didn't have the veggie burgers last night as my husband wasn't hungry before he had to leave for work. I just had a sandwich and some peanuts and fruit.
