    We’ve been out all weekend, Beer and Buses weekend, had a fab time, great roast beef dinner at lunchtime, packet of crisp for tea ;)
    Note to self - STOP SPENDING MONEY !!

    We had chicken, I had salmon, steamed heritage carrots, roast potatoes, spinach, kale and green beans.

    I thought I would do the mashed potatoes for the cottage pie for tomorrow. I steamed the carrots on top of the potatoes. I ended up with purple potatoes!! Which turned a nice lilac colour when mashed.

    I did that with red cabbage once and ended up with pink mash:rotfl:. Never even gave it a thought that the colour would run from the cabbage into the potatoes.

    Making another batch, but larger amount of celery soup, one head doesn’t go far!
    Sausage casserole or bake this week, mince and onion pie with mash, kale, carrots and peas
    Lunches today bacon and leek quiche and beans!
  • L/o sausage and rice for lunch, got small portion of what looks like cooked mince out of freezer, also a lump of bacon, probably cooking bacon so was looking for baked beans to make a sort of potato pie but could only find tinned spag so not too sure, may use other sort of beans but may not bother with them.
  • I'm making carrot, potato and red onion soup for the next few days lunches.

    I might have a veggie burger with sweetcorn and a salad tonight, even though it's not really the weather for it!

    Yesterday was a Mediterranean medley...

    Lunch: chargrilled aubergine, salad, hummus, falafels, pitta, olives and pickles

    Dinner: roasted veg (I bought ready cut and marinated as a weekday cheat, then used it up on the one day I have bags of time!), pasta, simple tomato sauce. Followed by tinned peaches and yoghurt.

    Tonight is veggie shepherds pie and the last green bean delivery from the in laws' garden.

    Easy dinner tonight - lamb chops marinaded in yoghurt and sumac, served with bubble & squeak (made with LO mash & cabbage from dinner yesterday) with baked beans.
