    Late night at work so husband cooked, salad, potatoes with spring onions and quorn nuggets.
    It was lovely.

  • Beef and pepper casserole (Asda recipe using frozen products). Will have with some rice from freezer too.

    Use up pasta bake tonight, courgette, onion, tomato, pepper, spinach, olives, mozzarella, tin tuna, mushrooms. Husband said it was very tasty.

    I just chopped up some potatoes, chicken breast and threw it in the oven with some green beans and frozen peppers. then I added some bbq sauce and cheese. Was actually really nice and the kids had seconds.

    Some Mediterranean tart from the freezer that I bought before OH went GF. With some new potatoes from lidl and mixed veg.

    Made a veggie / vegan (except for cooking the onions in ghee) chilli too, used up a couple of pepper and a sad carrot so will have that tomorrow or Friday.

    Cupboards and fridge looking a bit bare but still plenty in the freezer to use up so trying to avoid food shopping as long as i can.

    Used up some bits from the fridge, peppers, spring onions, tomato, mushrooms chopped up and fried off and stirred through wholemeal pasta; Made a sauce with a little of the pasta water and about 3/4 tub of low fat soft cheese spread. Was very tasty for a throw together dinner and using up some bits from the fridge before doing my fresh veg shop today.
