    I don't always use steaks but quite often use large cubes of braising or skirt steak instead. Always comes out really tender. I sometimes also cook it slightly longer than the recipe says with the lid off for the last 15 minutes or so to thicken up the gravy and then don't need to use the cornflour which I'm not keen on.

    It freezes really well too.

    Hope you enjoy it as much as I do.

    lunch was the other deluxe hotdog (is there such a thing?) for lunch in a brioche bun.

    OH then came home and dug out a couple of vegan Italian whirl things from the freezer and grilled them. He has his with chips and I had mine with come LO pasta and veg from the other night.

    Still trying to work through freezer stock rather than buy too much new.

    Made two portions of chicken stock this week, that's 4 carcasses and some veg (I often keep carrot peelings and tops / bottoms to use in stock) out of the freezer and two lovely portions of stock in.

    In late from work, finishing things off as I'm now off for a week.

    We had actifry chips, peas, pie and gravy. Must try to sort out some healthier food.

  • Toby carvery with mates this lunchtime so will have l/o roasties etc which I always bring home in a doggy bag. Bubble n squeak.

    No spending on dinner here today. We are having HM cottage pie from the freezer with a tin of mushy peas from my stash - 15p Lidl.

    Of course! I do 3 tins of chopped tomatoes plus 240g split lentils, 6ish chopped carrots, 2 stock cubes and loads of pepper and oregano. Plus as many cloves of garlic as I feel like I can get away with, sort of squashed a bit with a knife to infuse better. It needs about 6 hours or so on low in the slow cooker, but it's honestly worth the wait!

    Making salmon & ginger parcels with rice to serve. The parcels will also have tender stem broccoli and asparagus in.

    Really looking forward to this as haven't had salmon for a while.
