    We're sharing a YS vegetable pizza with some salad leaves on the side that were bought for tomorrow's meal to save any going to waste :)

    Saw a beautifully fresh & plump mackerel yesterday so got the fishmonger to fillet and pin bone it. Was wondering how I fancied cooking it this evening and came across a great recipe by Jo Pratt in her new book “The Flexible Pescaterian” called.... “Mackerel, Mushroom & Miso Broth” pg 79.

    Swapped the tofu for buckwheat Soba noodles and added a bit more leafy green veg for a really really tasty evening meal. The mackerel was grilled till the skin was blistered and the flesh oozing it’s oily goodness.

    I eat pretty healthily but for April will be challenging myself to have a more structured diet so I definitely get a bit of everything.

    My husband is working in NI and my daughter is going on a ski trip in the USA this week so I'm alone all week. Dinners will be salad, avocado and bean wraps all week followed by fruit. Quick, easy and relatively healthy.

  • Pan fried salmon. Boiled potatoes and green beans.
  • Chicken breast in breadcrumbs, with steamed new potatoes, broccoli and carrots. Knob of butter and some salt and pepper on the potatoes, otherwise far too healthy :D.

    Quorn chicken burgers in cheese-topped rolls with salad leaves, vegetarian hard cheese and caesar dressing. Microwave fries on the side.

    Chicken mushroom and sweetcorn pie made last night served with little baked potatoes peas and chicken gravy, some for lunch and dinners. Next on the list is sausage casserole
