    Lamb rogan josh tonight

We’re having roast lamb for Sunday lunch, looks like you have just solved what to do with leftovers :D

Tonight’s delights will be fridge bottom Chilli, using up peppers, onions etc making tortilla ‘bowls’ and the last of a bunch of coriander, a bit of grated cheese and then end of a pot of natural yoghurt :j

Salmon for us tonight as well - I make a 'thing' which is layers of sauteed sliced red onion and crushed garlic, thickly sliced par-boiled potatoes, chopped steamed spinach, cubed salmon fillets, a bit of fresh parsley, some black pepper, salt and a hint of cayenne pepper, with a generous amount of double cream poured over and a bit of finely grated parmesan on top. Bake for half an hour or so.

It really is delicious, and so quick and easy to make. Plus it's quite economical because two salmon fillets diced up in it goes a long way - enough for four large portions.
