A HM broccoli cheese from the freezer.
  • Tonight it's rice, black beans, kale, sweetcorn and some frozen mixed veg all mixed up together. It's not a pretty dish, but it's dirt cheap and ticks all the boxes for nutrition.

Stir fry veg, rice noodles and cashews, supporting the daughter in her veganuary (I ate a chunk of cheese whilst I was cooking)

And soon to eat the rest of yesterday's crumble. With custard.

I'm struggling to find food I really enjoy ATM. Didn't enjoy the prawns (was counting down how many I had left to eat) and just don't find anything inspiring. Perhaps it's because I'm cooking stuff to use it

Yup, know how you feel.... did supper this evening from a recipe I’ve enjoyed in the past but swapped, added & subtracted stuff that needed using and it turned out all meh!

Still got a portion and a half but to be honest I think it’s going to go in the bin. The only consolation was I had a good lunch.

Yesterday I made a soup with leftover veg. I kind of made it up. Chopped up one onion, one leek and some past its best brocolli and put it in a pan with 50g of butter and salt and pepper. I made a cartouche from baking paper and let it cook for 10 minutes on a low heat. Then I added chicken stock, celery and carrots and cooked for 10 mins. I used my bamix to liquidise it and added some left over cream. It was so delicious we had it for dinner with warm Naan bread.

So tonight I am cooking the chicken we should have had last night, and we are having brown rice, salad and coleslaw with it.

I had some LO turkey from Xmas, with the last of the carrots and parsnips with LO cauli cheese from the night before last. Oh, and some LO bread sauce I'd previously frozen in an ice cube tray then decanted into a bag.

Still not feeling overly inspired - nearly bought a plant based Spag Bog in M&S today as that looked nice but decided against it.

Next time you have leftover prawns this is a lovely recipe

You can use cooked prawns and I always add a pepper to it.

I'm with you on the prawns but the curry doesn't taste particularly fishy, just yum.
