Late lunch of jacket potatoes and ratatouille - lovely 😃

Dh had veg curry & rice this evening plus fruit and a cereal bar. I had all the other berries that needed using up with a very ripe banana and alpro dessert.

Doing well as not wasting a scrap at the moment👍

  • We're going out today no urgent jobs left so 'freedom'! we'll pick up a snacky lunch out at either the arboretum, Slimbridge or a garden centre depending on where we decide to go and supper this evening will be a chickpea, mushroom and spinach curry with basmati rice, cucumber and mint raita and chutney. Cup of coffee to finish.

    Trying to decide between:

Baked sweet potatoes, roasted spiced veg, dollop of hummus

    and

    Quinoa and bean chilli

Either will be served with corn on the cob and some steamed broccoli.

Don’t know what to do tonight as I basked out an extra long walk last night and really enjoyed it so don’t know whether to do the same tonight which is less cooking time. If I don’t I think it will be sausage casserole and a a bit of gammon in the slow cooker to use for lunches

I’m making meatballs in sauce, using up the last courgette from the allotment and carrots.

Also making a bolognese sauce at the sane time - for tea tomorrow.

    Both sound delicious :):)

We finished up the veggie curry today. Still have leftover rice so will make a chilli tomorrow to go with some of it and the rest will be used up in stuffed sweet peppers.

Strawberries for dessert again today, enjoying them while they are still in season.
