    I made a tuna pasta bake with salad and garlic bread. The tuna pasta had leftover olives, baby tomatoes, onion, sweetcorn thrown in. Quick and easy.

    OH had mushy peas and something or other tonight (I was still working).

    Husband burned himself the other day using the microwave. He put a cup of milk in to warm up, took it out and put a spoon into the milk to stir it. As the spoon went into the milk the milk exploded. Never seen anything like it. He had a bad burn on his hands where the milk splashed up and it was all over the work surfaces.

    Ouch! Poor him. I do think about getting rid of ours at times, it would be nice to have the space and OH doesn't use it - but there's times when it is handy.

    Tonight is pizza night - got us a posh one from L!dl (hand stretched, stone backed, Buffalo mozarella yhrdy yah) Still cheaper than a takeaway though.

  • Oatmeal soup with chicken for me and a sandwich for HWK for lunch today and supper will be a vegan Chilli Mole which we'll have with home made salsa, chopped avocado, lime wedges and some mashed potato that needs to be used. Cup of coffee to finish.

    Jacket potatoes with baked beans for lunch today , with cheese for dd2 and with salad for me.

    Dinner for dh and I will be the last of the spaghetti nuked with hm sauce and courgetti. strawberries 🍓 for dessert .

    I made a veg chilli for supper last night and it was scrum-diddly-umptious. Luckily there is enough leftover for more of the same tonight. :)

    Homemade raspberry and crushed meringue ice cream for pud.

    I had a brunch of bacon and egg on toast. It eventually dawned on me that rather than buy bacon medallions it was easier and cheaper to buy ordinary rashers and remove the fat myself.

    I took some frozen lamb chops out last night to defrost and used up the onion, carrots and potatoes that were in the fridge. A lamb casserole is finishing off in the oven and once cooled I will remove any fat and portion into containers.

    I am hoping not to buy anything over the weekend other than treat a dd to the cinema as it is a shock to realise how going to the local small shop every day or so for a few items mounts up over a month.
    Might go back to online supermarket grocery orders but spending half the week at dd and helping with baby makes it more difficult to plan.

    The silly thing is that I enjoy making something out of "nothing" and using up what is already in the fridge, freezer, cupboards etc. It is just too easy when cooking for one to just pick up something.

  • Just cooling some long simmered chicken stock for meals this weekend.

    Was planning on doing a ‘cacio e pepe’ (spaghetti with pepper & parmesan) but not feeling hungry at all. Will probably have some eggs on toast later.
