    I made Spankopita (spinach and feta cheese pie (it's flavoured with mint too) yesterday so that will be a few days lunches and I've soaked up a big batch of chick peas to cook this morning so I will make hummus with some of them and a tamarind chickpea curry with the rest which we'll have this evening with some lemon dahl, basmati rice and a nice cooling cucumber riata. Just the right kind of food for this hotter than we're used to weather.

    Lyn- that sounds amazing, I am avoiding carbs at the moment, well,till some of this jelly belly goes :D but your menu would be right up my alley :j

    Yesterday’s salads with cold ham and blaccurrant scones for desert. More of a high tea than a dinner really :)

    We had a seven (7) SEVEN hour power cut last night, just as I was about to cook the basa fillets so the dish was put back in the fridge and we'll have it tonight instead.

    Last night we managed with a 'powercut special' - cheese, olives, cherry tomatoes, thick cut slices of ham and some pickles plus a bottle of wine. We played Scrabble by candlelight and it was really rather nice :)

    I am just hoping my freezer contents will be okay (I didn't check them before I left for work this morning). I have a small tub of ice in there which has a coin on top - so if it melts and re-freezes I will be able to tell.

    I have been to the local bakers for a ham salad so looking forward to lunch, they do lovely salads and all very fresh. Tonight not so sure, im not feeling inspired by anything for tonight as its so hot, I want to make potato salad but no chives to be had in the local shop and it tastes much better with, need to also spring clean the fridge, probably the freezer too!
  • Last night we had LO chicken in a stir fry with veg and noodles. Tonight we'll be having a steak burger in a bun with sweet potato fries and salad from the garden, except the tomatoes as ours aren't ready yet. I've made a lemon cheesecake for pud.

    I used the veg I roasted the other night in an omelette ....it wasn't nice sadly.

    Really could not be bothered cooking tonight, I walked the dog, in a shaded wooded are,came home, feet up, tried to find some inspiration.
    Husband and daughter had a frozen paella ready meal,that I got half price. Not sure I would buy it again. This was served with padron peppers (from Lidl) I also made garlic bread to use up my HM bread from Sunday, I didn't want to waste it. However instead of garlic I used garlic salt. So the bread went in the bin anyway.
    I had some halloumi fries from Aldi with salad. This is the third time I have had them and I am not as keen on them as I was.
    I feel the hot weather is making me grumpy, oh well weekend start shortly.

    Friday AGAIN... where is this year going :eek:

    DH's weekly turn at providing dinner, I might pursued him to grab fish and chips and go down the front (sit by the sea) to eat them - our local chippy does GF fish on a Friday, and I don't have chips

    I love people watching this time of year, lovely summer outfits showing off weird and wonderful tan lines and sun burn :rotfl: I shall remain pale and interesting as I love the heat, but hate the sun :D

  • Found some of last years home grown tomatoes in the freezer so I shall make a tomato sauce from them and make us a scone based pizza for our evening meal with a nice lettuce based salad when it cools down tonight, finding I can't find an appetite in the heat!

    i have got another ham salad from the bakers today, i had chicken goujons, salad and roasted garlic mayo for tea last night, im going to turn into a rabbit or something! no idea and no inspiration for tonight as i just cant face slaving over a cooker in this heat lol :T
