    Sorry I’ve had a rough few days. I’ll explain all about it when I can 

    today we had pie, mash made with white and sweet potatoes, carrots, broccoli and peas. Then for a change we had onion gravy, very nice it was too

    Leftover homemade chicken korma & rice for OH and freezer leftover bits to make battered sausage, mash, peas & gravy for me.

    I’m trying to use up and empty the freezer as it’s full to bursting!

    Tenth Anniversary 500 Posts Name Dropper Combo Breaker
    Last night the kids had chunky fish fingers with mash and veg. DH and I ate later as he was in the office, so I defrosted a lentil cottage pie base and made extra mash to top it with. Cooked it in the oven with the fish fingers and reheated later in the microwave. There’s enough left for two for dinner tonight. Not sure what the kids will have yet 🤔

    Using up cupboard, fridge and freezer food to make a treat tea after a long day.

    - YS lamb kebabs out of the freezer
    - Chopped mint & Greek yoghurt sauce
    - Aldi veggie couscous with some added chopped olives out of a jar and fresh coriander
    - Patatas bravas (tinned potatoes roasted with oil, salt & paprika) with a thick tomato sauce (passata, garlic granules, sweet smoked and hot smoked paprika, chopped sun-dried tomatoes, dash of ketchup, veg stock cube, 2 tbsp sugar, 1/2 tbsp miso paste, the cooked meat juices from the kebabs and salt to taste - I made extra to freeze).

    I always have lots of Greek yoghurt for OH’s breakfasts & fresh mint for my tea (tastes 1000x better than mint teabags!) and I keep cheap Aldi jars of pickles - olives, sun dried tomatoes, bell peppers, gherkins etc. in the fridge to add flavour to dishes.

    If I wasn’t being lazy, I could have made a couple of cheap flatbreads using flour, water, salt & yoghurt but another day perhaps.

    And old-school butterscotch Angel Delight for dessert!
