Bought some part baked rolls in Aldi the other night so tried out the bake function on the Air Fryer tonight (successfully)

Part baked rolls, with meat free sausage, fried onions and I had fried mushrooms too (OH doesn't like mushrooms much).

I made some Thai spiced cod fishcakes which we had with an oriental salad and a few cheeky chips. The cod, Thai green paste, spring onions, red chilli, lettuce, cucumber, mange tout peas, coriander, mint, potatoes, soy sauce, rice wine vinegar and peanuts were all free from the community fridge - all I had to buy were the beansprouts. I’ve been unbelievably lucky with what’s been on offer there recently 😀

Chicken breasts roasted in the Ninja and served with carrots, peas, cabbage and gravy. I’ve made an apple crumble for pud.

I was lucky enough to be taken out for an early Mother’s Day lunch (we are going to my parents for the actual day, so that will be about my mum rather than me 😉), I had goats cheese salad and spaghetti bolognese, which is my death row dinner of choice 😋

If anyone else is hungry later - which they will be - they can have ham sandwiches, cheese toasties or a combination of both.
