Would'nt mind checking options for trying to do something similar for Avios ?
Stu,
as Stoneman says, lots of (IMO) better flexibility with Avios. And you can achieve similar (better?) results with the patterns of spending you describe.
Headforpoints should be your first port of call, followed by Flyertalk, specifically

and

To give you a context in the last 2-3 years my wife and I have earned and spent avios points to do the following on BA AMEX 2-4-1's;
April/May 18
Newcastle - San Diego (via LHR) in 1st, return San Jose - Newcastle (via LHR) in business, for £1100 plus the avios (142000)
Booked for Jun/Jul 2019 is NCL-LAS in first, rtn in business, for £1200 and 142000 avios.
We have another earned 241 that we'll use when the points build back up.
Avios are earned by putting everything possible on AMEX - 1st the BA premium one (to earn the 241), then AMEX preferred rewards gold, then BA premium in wifes name (with me as supplimentary), then AMEX preferred, then back to me on BA AMEX.
Just a constant apply, earn, cancel, repeat cycle (for the signup bonuses).0 -

Vegas hotels got a 25% sale on today and tomorrow (Caesars and MGM group), going to book it today I think, has been mentioned that you can cancel the hotel if you find it cheaper and just re-book it but how easy is it to cancel? Would rather not have to ring the US to do it!0

It is very easy to cancel an existing reservation online. If you find a better rate just make sure to book the better rate before you cancel your old reservation.0 -
