Here you go, D&DDs recipe on post 101
Microwave meringues
Ingredients
1 large egg, white only
255g/9oz icing sugar, sifted
double cream, for serving
1. Mix the egg white and icing sugar in a medium bowl until it forms a fudge-like dough.
2. Divide the mixture into nine and roll each portion into a ball.
3. Place three balls at a time on to a piece of non-stick paper on a microwave-proof plate.
4.microwave on high for one minute 50 seconds.
5. Remove and set aside to set.
6. Once the meringues have hardened, remove and repeat step 3 twice more.
7. Serve piled up and drizzled with cream or smash and mix with cream and fruit mmm.
Speedy yoghurt cake
5 oz carton flavoured yoghurt (strawberry is nice)
6 oz s r flour
5 oz c sugar
1 oz butter melted
2 eggs beaten
4 oz sultanas
Mix everything in a bowl and pour into a lined 2lb loaf tin.Bake 350f for 45 mins approx
I have used toffee,strawberry,raspberry and cherry yoghurts for this and they are all nice,it's a good way to use up extras.AUGUST GROCERY CHALLENGE £115.93/ £250

Kethry - I tried your bread last night - it was lovely! it shall become our high days and holidays loaf for when I have spare time.....I use my beloved panny on a day to day basis, and love the bread that comes out of it, but it is nice to have an extra special recipe for when I have more time....if my thanks button was working I'd use it, but please accept my unbuttoned thanks meanwhile! :beer:

Well the onion marmalade is madeIf you boil it for longer - I kept it lightly simmering - then the liquid does thicken but it is still slightly runny. We had some with our baked ham for tea - t'was yum!
Just made more choc cake with frosty chocolate toffee-like topping - the cupcakes I made yesterday with ds went down very well and I had requests to make more this evening0 -
I'm not sure about the yoghurt cake.I like the idea but not sure whether my lot will eat it.Going to make Carrot cake and some more of Tinks' Biscuits tomorrow.The MW meringues went down really well and the fact that there is none left sort of gives me a clue that they were good lol.
Yategirl how did you make the topping for your chocolate cake?I always end up either icing or buttercreaming mine so new suggestions would be most welcome
Cheerfulness4 I usually top my carrot cake with cream cheese mixed with a little icing sugar and crushed pineapple.We dont like walnuts so we tried substituting the pineapple and its totally yummy

Thanks Cheerfulness4! Will hopefully get to make some at weekend once I have my shopping delivered.Might even have a go at yoghurt cake. It sounds yum!Trouble is I should be losing weight not baking cakes and eating them!!
