:j We've had 2 gorgeous days here in Surrey and everything has started to romp away in the garden.I've been trying to get most of the potting on done as the next few days are forecast to be very wet
Perfect weather so far for veggies
I've wrestled the camera back off OH so will upload the pics later for you.
I've grown much more than even I do normally of our favourite things so I've got plenty to dehydrate, freeze and preserve
We now have 60 strawberry plants :rotfl: :rotfl: Guess why
I've done all the washing today as its been a lovely drying day and even just finished the ironing :T
So tomorrow is going to be a baking day
I've got a busy week coming up so I plan to do some dinners for the week as well to save time.
I'm just going to have a rummage through some of my cookery books later and see what I can knock up with what I've got in already
Hope you've all had a great day too

Hello all
Here's a recipe for the only soup my DS1 (he's 4) will eat without arguments. It is known in our house as green soup but I think it's more commonly known as potato, leek & spinach soup! This is really nice with thickly buttered crusty bread and we eat it for lunch at the weekends or for tea during the week.
Couple of onions, chopped
2 x sticks celery, chopped
2 x cloves garlic, chopped/crushed
4 x leeks, chopped
Couple largeish potatoes, peeled & chopped into cubes
2 pints stock, I use vegetable
Bayleaf (I sometimes forget about adding this and soup is still nice)
Bag baby spinach leaves (225g approx)
Put some oil in a large saucepan over a low heat (I tend to use 2 tbsp olive oil & knob of butter)
Add onion, celery & garlic, stir, put lid on pan and cook for 5 mins (stir now and again)
Add leek, stir, put lid back on and cook for another 5 mins, stirring now and again. Try not to let the leek brown
Add potato, stock & bay leaf
Turn up heat, bring to boil, reduce heat to low and cook for 20-25 mins (I leave lid on but at an angle so some steam can escape_
Take pan off heat, remove bayleaf and blend soup to smooth consistency
Add spinch leaves and blend again
Put pan back on heat and warm soup
Pour into bowls, eat and enjoy
Very nice sprinkled with chopped chives or croutons or both...!
Oooh that sounds lovely *adds to list for tomorrow!!* thanks
I have leeks, chives, spinach in the garden still to use, must add this to my recipe book0 -
rainmac love the green soup recipe and must try it out on my children
Well I'm feeling pretty pleased with myself as I spent a productive afternoon yesterday burger and meatball making and now I have loads of each in the freezer ready for future use.I dont know about you but I love meatballs but always find them fiddly and time consuming to make and so I try to have a couple of portions of the mix ready made in the freezer so that all I have to do is roll them and fry them:T Its lumping it down here so I will have to find something for the kids to do I reckon chocolate cornflakes should keep them happy for a while;) I still havent tried out my piemaker so I'll have to put that right today.I've got some chicken and ham pie filling in the freezer so I think I'll experiment with that and apple to try sweet versions.I've also got an urge to make a Manchester Tart.I havent had one of these in yonks
Dee its lovely to have you back and have you noticed how quickly this spread has sprung back to life now that you've returned?Shows we missed ya:p

well i've finally sat down with my first cuppa of the day  can you believe it!!
so much for Sunday being a day of rest :rotfl: i did all my usual housework that i do every day....i have to hoover every day cos of the 3 dogs, but today i also washed the windows, cut the lawn, made choc chip muffins and scones, and a big pan of spag bol. not sure whether to have it as spag bol for tea, or make it into lasagne yet....probably just spag bol, cos it'll be less faffing about!!
so i had all this to do as well as giving DS lifts to rugby training, and nipping into town for some veg. feel like i've been on the go forever!!
well thats my moaning done for the day!! gonna finish my cuppa and try and catch up on some of the posts on here now, before i have to get the tea ready properly. its great to see this thread still up and running0 -

You'll need
Pasta shapes - enough to feed 4
Red onion chopped
Clove or two of garlic, chopped/crushed
6 slices streaky bacon chopped
Couple handfuls frozen peas
Creme fraiche
Black pepper
Cook pasta shapes
Meanwhile heat frying pan with some oil
Add onion and garlic to frying pan, cook for a couple fo minutes
Add bacon to onion/garlic mixture and fry until golden/crispy
Add frozen peas to pasta for last 3-4 mins of cooking time
Drain pasta shapes & peas when cooked and turn back into saucepan
Add bacon, onion, garlic to pasta/peas and stir
Add a couple of tbsp creme fraiche (maybe 3) to pasta mixture and generous amount of pepper. If you want mixture to be slacker add more creme fraiche or a bit of the drained pasta water
Stir and serve
Very nice with garlic bread. If you want the rainbow, you've got to put up with the rain :wave:0 -

Made burgers yday for lunch, kids all prefer the hm ones, complain that the shop ones don't taste of anything - guess tesco don't use quite so many herbs, garlic and chillis as me!Wrapped the mix around pieces of cheese - instant cheese burgers!
I know it's totally daft, but I always make them when we want them, it has truley never occured to me to make extras to freezeCan't believe how dopey I can be sometimes, so thanks Lesley for the tip! Have told oh that he needs to drop into the farm shop he passes on his way to work, they always have huge packs of mince at a really good price! Shame he's working from home today, he'll have to get it tomorrow then I can get busy on Weds! Must remind him to get pork (with apple - dd1's faves), lamb (with apricot or just lots of mint - oh's fave) and beef (with chilli and lots of onion - ds's fave), don't want to be accused of favouritism :rotfl:
