    Hi all
    Maman, I’ve screenshot your casserole recipe if that’s okay?
    My mum got me a subscription to SW mag for Xmas and as a free gift I got a heavy casserole pan which has just arrived, so I’m going to have a go- your recipe looks simple and fab- just what I need!
    What a day- I’ve not stopped all day! The snow has thankfully thawed pretty rapidly although there’s still a lot of slush and ice about. I managed to get to the chemist, post office and Co-op today but it took some doing. Typical- I’ve been in the house literally all day every day all week, I manage to get out for half an hour and while I’m out OH’s new passport and my casserole pan turn up!! I had to struggle back to the post office to pick up the pan- damn thing was enormous :D It is rather swanky though.
    Absolutely shattered now- I’ve not stopped all day and I’ve still got 500 words of my assignment to do yet!
    Today’s food:
    B: HEXB HiFi x 2, 2 satsumas, decaf coffee with HEXA
    L: Ham stir fry with plain dried egg noodles, raspberries and Light and Free yoghurt
    T: Salt and chilli Quorn with extra veg, Fab lolly (4)
    S: 4 Crackerbreads (4) with part HEXA Laughing Cow Light and ham, crisps (6.5)
    Syns: 18.5

    No problem MrsR but I looked out the 'official' recipe in case you wanted to see it.

    Chicken Casserole
    Ingredients (for 4)

    • oil
    • 1 onion, sliced
    • 2 carrots, sliced
    • 2 celery sticks, sliced
    • 600g pack chicken thighs
    • 2 tbsps cornflour
    • 500g quartered new potatoes
    • rosemary and thyme
    • 600ml stock
    • can butter beans drained
    Method

    • heat oven to 180
    • cook carrots, celery and onion in oil to soften and coat
    • add chicken and brown
    • add potatoes, herbs and stock and heat to simmer
    • Cook in the oven for 45 mins
    • mix cornflour with a little water to make a paste, stir into the casserole with butter beans
    • cook for a further 10 minutes
    That's the official version but we're great at adapting for SW! So obviously Frylight then I add extra veg (leeks, mushrooms, courgettes fresh or frozen whatever I have in). I like the potatoes cooked in the sauce but you could use tinned or leave them out. I always serve with a side of veg like cabbage or cauli or broccoli. I also tend to use a bit less stock and so a bit less cornflour. It depends how thick you like the sauce.

    Decided I couldn’t face cooking so I’m spending 6.5 syns on a Chinese takeaway- chicken in oyster sauce with boiled rice. I even carefully weighed out the portion! And it’s blooming lovely ❤️

    Cauliflower is speed, so if you are just whizzing it too rice, why is it not speed?

    Not exactly sure what you mean but I'd have said it's still Speed but could have a few syns. I'm thinking it's the same 'rules' as mashed banana and stewed fruit. I believe it's to do with some of the fibre being broken down before you eat it compared with using cals to digest it yourself.
    Well it makes sense to me! (but unless you have it every day I don't think it'll make much difference).

    Are we to assume that you got your shiny and slimmer of the week? :)

    DH didn't want anything so I've just finished off the beef. Lush! It's worth having roast beef to use up the leftovers. :rotfl:

    Well what im saying is cauliflower as veg is free and speed, cauliflower rice is still free but not speed.
