Another vote for stainless steel. I've got a couple of good quality stainless steel pans that I bought in Tescos back in the mid 90's and they're still going strong. They wash up easily too, even if you burn something in them. Just leave them to soak overnight.0

Another vote for Circulon. I replaced mine after 20 years of daily use. There was nothing wrong with them but I received a gift of a brand new set for Christmas. Lucky me! They really keep their look, are not heavy and are easy to clean. Not the cheapest but look in Debenhams as they sometimes do half price sets. A worthwhile investment. My friend used to manage a cookshop and swears by them.0

I would go for stainless steel too but really good ones with heavy bases to stop heat spots.
I invested in a set of Aga stainless steel casserole pans in December and I love them. The lids have inset handles so you can stack them or store away them really easily - normal pan lids with sticky up handles are the bane of my kitchen.
My mother recommended the Aga ones as she replaced their Le Creseut saucepans with the Aga stainless steel ones years ago (she found the Le Creuset too heavy and the enamel can chip after a few years).
Edited to add: The one pan I might have different is a big frying pan. That I'd get in cast iron as once you've seasoned it properly a cast iron pan is the best thing in the kitchen.0 -
We bought Circulon pans last year from John Lewis and I absolutely love them. After years of buying cheap supermarket pans, I wish I'd just spent the extra - they clean up beautifully, nothing sticks to them and they cook evenly.“I tell you, we are here on Earth to fart around, and don't let anybody tell you different.”

Yes they do!!! I bought a set from an independent kitchenware shop a few years ago and have since picked up matching jugs/steamers/pans etc from TkMaxx at very reasonable prices. Original ones are wearing very well and I'm very pleased with them.0 -
Another vote for stainless steel. I have Bourgeat pans, bought them about 20 years ago use them a lot and they are immaculate.0

Another vote for circulon, I bought steller stainless steel ones when I left uni but would swap them all for a circulon set! they clean and cook much better. If you can't afford the circulon ones, stainless steel are ok and cheaper though.0
