I tidied the kitchen cupboards today. I do not need to buy red lentils, chopped tomatoes or tuna for the foreseeable future, and I need to actually plan to use them up instead of them filling cupboard space. The kitchen is next on the great 'actually finish the house' plan.Lots of garden tidying yesterday and a small fritter on some dianthus for the drive pots. The green waste bins are full, and every nettle root I dug up is one less to fret about later. thanks - I agree although I usually kill things before I plant them but for once I gave them a good soak and potted them on. £2.50 for 4 so not bad. Dinner tonight, before I forget how I made it.
finely diced onions, 5 minutes of sweating in a little oil. Added chicken stock 300ml, mixed Italian herbs, garlic powder and gave it a couple more minutes. A squirt of tomato ketchup and a pack of passata. Gave it 15 minutes to thicken.
chicken cut into thirds, then flattened out with a rolling pin. Browned in frying pan before adding in a layer on top of the tomato base. Grated Parmesan on top, lid on and 15 minutes at 180, lid off and another 10 to reduce and brown. Served with more grated cheese, over pasta for those that eat it. In a bowl for those that don't. That sounds a bit like the “pizza” chicken my DD sometimes makes. I do something similar with cod, it’s delicious 😋I get knocked down but I get up again (Chumbawamba, Tubthumping)4
