    Florentines recipe came up on Faceache today, but that's a weekend job.

    It came up on mine too... so I taught today’s assistant how to make them. She chose cherries and almonds because her sister doesn’t like them! They were very nice, but I only tried a tiny bit as I’m still on soup...

    This weekend I need to make ours for giving out when we go visiting family.

  • Florentines

    150ml double cream
    25g butter
    90g sugar
    15g plain flour
    230g of filler - flaked almonds, whole almonds, candied peel, cherries - I usually use all flaked almonds

    Chocolate to coat the base, I don't bother.

    Melt the butter and sugar. Add the flour and stir it in to make a ball of paste. Off the heat, whisk in the cream to make a smooth sauce. Back on. A gentle heat to beat out any last lumps. Off the heat, stir in fruit and almonds.

    Heaped teaspoons onto greased baking sheets. Remember they spread. 10-12 minutes at 190. Leave for a couple of minutes to firm up before moving to wire rack.

  • busy day, but managed to actually do some prep. Boys stuff is wrapped, and I've made mince pies, jam tarts and almond florentines, sans chocolate - may get round to melting and dipping tomorrow but I like them as they are. Also made the cranberry sauce as they were started to look less than fresh despite the long date.

    Must make florentines tomorrow. I've found flaked almonds and crystalised ginger bits in my mum's cupboards, so those should do. Also some dark chocolate if I'm feeling energetic!
  • more biscotti and mini meringues made today, and the turkey lovingly put into its bucket of brine tonight. Starting to feel a lot like Christmas in this house. I think because I have had so little free time, I've had to be organised so for once we are miles ahead on everything.

    Tomorrow I may even insist on a walk, complete with reluctant teenagers.
