evening all ,
the 🐸 a canny lad ... but 🤫🤫 don't tell him lol ...
I've had a bit of a day at work today , the world is full of idiots , wish they would do one and let us get on with helping people and doing our job ..
came home , talked things through then went out and ran 8 mile . in the middle of the woods , it was calm ... lush .
now I haven't got a long weekend off anymore , pharmacys are going to be open good Friday and Monday too.. prob 3 hours, so it may be quiet ?? .. if you need to call/collect... check if you can ..
still managing to feed everyone real food dispite the stress , need to make some cake soon , need a easy fruit cake recipe ...
made a j o flapjack recipe at the weekend it wasn't great, just ok ..

Pineapple fruit cake
370g pineapple pieces, mashed to a pulp, buy in a tin or chop chunks up small, drain some but not all of the juice off, so the mixture doesn't get too wet
115g sunflower spread
115g caster sugar
450g sultanas or dried fruit
115g self raising flour
115g plain flour
1teaspoon bicarb
2 eggs
Cherries to decorate, optional
Method
Melt spread and sugar in a pan. Add sultanas and pineapple and boil for 3 minutes.
Add bicarb and stir well.
Leave to cool overnight
Add flours and beaten eggs
Pour mix into a lined tin/tins and decorate with cherry halves if using.
Bake at 140c for 1 and a half hours, then 130c for half an hour.
Leave to cool before cutting.
This is a very easy cake to make, and it makes one large round cake or two large loaves. It's something a bit special for the Easter weekend.

My veg boxes arrived this morning and I've donated my carrots, potatoes, kiwis and apples (of which I have plenty) to neighbours who are making Easter lunch for a group of us. However, this week they remembered to leave both boxes - so I have mixed leaf salad, red pepper, asparagus, spring cabbage, curly kale, cucumber, celery, mushrooms, strawberries and bananas. Plus a volunteer got me red & green chicory, little gem lettuce, spinach, cucumber, mixed peppers and avocados yesterday. In addition I've got hot cross buns, kefir, kombucha, sauerkraut and live yogurt - so hopefully plenty to help with recovery from the virus, whatever the secondary infection was, and the vast amounts of antibiotics...
Now I need to do some serious meal planning!13 -

Yes, I’ve got carrots! I offered them to a neighbour, but they don’t need them, so it’s halwa and carrot chips tomorrow, I guess!
I got other things, too, and I have a Waitrose delivery coming this afternoon, with a few treats! 😁 So am having a bit of a pig and alcohol day today, but as I have only really eaten veg for the last four weeks, I make no excuses! 😁(I just lurve spiders!)

I'm glad you've managed to get a waitrose shop. Enjoy your treats! My hot cross buns have been a lot more special because I've had to wait for them. In fact I'm appreciating food a lot more in general now I have to think about it and plan carefully. Lunch today was a HUGE salad with baba ganoush (last week's aubergine), followed by a clementine with greek yogurt and flaked almonds. I'm enjoying meals rather than just eating mindlessly or in a rush.8

It’s galling to think that asparagus season is upon us, and I can’t get any! They did say they are trying to get a few more optional veg, though, so maybe next week.

I bet there are carrots and potatoes again next week... And apples and kiwis and clementines... I was really lucky with the asparagus. My dad used to grow it, and a neighbour has just given my mum a huge bunch of locally grown stuff that she picked up when she too my mum's list in to the butcher (the butcher delivers meat, cheese and veg once a week).
My bacon didn't arrive either, which is sad. But lots of other stuff did, so I won't starve. And I found more stuff in the outside freezer. By the end of this I might even have got to the bottom of it7 -

I might put some in a G&T tomorrow night to celebrate finishing the antibiotics. I've had a glass of kombucha tonight - not bad, but not quite the same.
