    I just found these really delicious pineapple and mango fruit crisps that were really tasty and only about 60 calories!! They also do apple and orange and strawberry and loads of other crisps. Don't know which shop you can buy them but I ordered on line at nimsfruitcrisps.com. they actually taste more like the fruit than the fruit. They say there is no sugar or anything added.
  • Had a look but can't find anything!

    Made the mistake of baking for the office and it is now an eagerly anticipated treat! However, I was asked to make flapjacks as they decided that they should be eating a little more healthily, and shock of shocks had to buy something while I was away! The flapjacks are currently being enjoyed, but I would like to find something that can be a treat, but at the same time resonably healthy so that I can have a bit more variety.

    Can anyone suggest anything?

    If its for largish numbers I do a sticky gingerbread - I know its not particularly healthy, but it cuts very easy into very small pieces (I do mine slightly smaller than a Penguin biscuit) and as its fairly strong flavoured a little bit satisfies.

  • If its for largish numbers I do a sticky gingerbread - I know its not particularly healthy, but it cuts very easy into very small pieces (I do mine slightly smaller than a Penguin biscuit) and as its fairly strong flavoured a little bit satisfies.

    Granny's recipe book to the rescue:

    Sift together in a fairly large bowl:

    8oz SR Flour
    pinch Salt
    2 tsp ground ginger
    1 tsp mixed spice
    1 tsp bicarb
    Stir in 2oz soft brown sugar

    Melt together:

    4oz marg
    6oz treacle
    2oz golden syrup

    When melted let it cool and add

    1/4 pt milk
    2 beaten eggs

    Pour the wet over the dry and mix with a wooden spoon until well incorporated. It will begin to froth a little - but that's just the bicarb doing its work.

    Pour into a 7" square cake tin (I've got a silicon one, but use a lasagne dish otherwise). Make sure that the batter doesn't come more than 1/2 way up you tin because this will puff up and overflow (ask me how I know this???)

    Bake at 150 for between 45 - 75 minutes or until a strand of dry spaghetti comes out clean (It will depend on the size of you dish as to how long it takes.

    Now here's the important part - stick it in a tin and leave it for three days and it will transform into proper sticky gingerbread as opposed to a ginger flavoured cake IYSWIM.

    Yum, may make this on Saturday morning as I have to make a cherry cake for a friend, so can have both in at same time, should then be ok for office on Tuesday. Was whinging to myself about how spoilt they are and then get handed a kindle as a present, can't really complain now,can I?
