There are still a few bits going cheap from Christmas around. eg M&S have their Blini mix reduced to 39 or 49p.
Nigella's sticky sausages (just google that) went down really well at my last do and all the sausages I bought were reduced on the yellow labels.

I would also say look around for Christmas stuff. M&S were selling big cakes at the beginning of the week. They could be served ready sliced as party food, or very simply re-decorated as the main cakes.
Don;t try to make sandwiches - it'll take forever and you'll end up wanting to stab someone from sheer frustration. I usually make great big tubs of hoummous ( cheap if homemade ), a really good cheeseboard, and savoury biscuits. Saves a lot of on-the-day hassle.0 -

Mayonnaise is brilliant as a base - you can add almost anything to make a classy dip. A couple of things I make for buffet food are;
Small chunks of chicken coated in a Chinese Chilli sauce (Aldi do a great one), cook in the oven for about 20/30 mins, then skewer them on cocktail sticks.
Make your own sausage rolls. dead simple!
Make your own Potato Salad and Coleslaw.

i know you are wading through other posts but i thought i would throw my piece in the mix. Since you are doing quiches and salmon, i would do some new pots, boiled then have loads of other salad bits and bobs. then it can all be prepared before and doesn't matter if it's not kept warm. cous cous salad, little toms, olives, sweetcorn, beetroot, carrots, cucumber, pot salad, quinoa salad, spring onions, pickled onions, crisps, bread sticks, crutons, bacon bits, keep going along this vain and you will have a table full with amazing colours and something to suit everybody.

pudding i would do tray bakes. or an apple pie something that can be portioned easy and shared.Opinion on everything, knowledge of nothing.0
