Tortilla wraps, spread with cream cheese and the cheap smoked salmon pieces from MrS, roll and wrap roll in cling film and put in fridge. take like this to do and slice at party or slice and put on plate.
Same with chilli tortillas, cream cheese, chopped cooked chicken and a dollop of sweet chilli dip mix together and spread and roll as above.
They taste delicious look good, easy to transport, and cheap.0 -
my fave cheese straw recipe (which I dont share usually, is this one)
make 8 ozs of shortcrust pastry with 8 oz of self raising flour and butter as the fat content and add a good tablespoon of parmegiano reggiano and a couple of ounces of strong cheddar. roll out to about a quarter of an inch and cut into strips about a quarter inch wide by about 4 or 5 or 6 inches. Seperate them and you can either leave them straight or twist them and put onto baking sheet (I like to use baking parchment rather than greasing the tray . grate more parm over them and then bake in oven Gas 6 for about 12 minutes. they are done when they are golden and firm . and absolutly delish and very moreish!0 -
oops meant to say my fave posh buffet contribution are my cheese and basil tartlets.
also very simple
a pack of filo pastry
some nice cheese such as white stilton, or any hard cheese
basil leaves
cherry tomatoes
unroll the filo pastry and brush with either melted butter or oil
cut them into about 3 or 4 inch squares and line the greased bun tin with them.
do the same with the next layer of pastry but put them so the points are between the other points of pastry IYSWIM.
Do another layer then put a few chunks of cheese in them and a basil leaf and a half cherry tomato - add a little salt and pepper and bake at gas 6 or 7 for about 15 minutes or until the filo pastry is golden. dont worry about the cheese melting - it doesnt have to! one pack of filo will make about 24 or if you want more than that just do two layers of pastry.0 -
When my Mum used to make cheese straws for parties she made most of them straight but also made some rings with two round biscuit cutters - one smaller than the other - which she used to 'bundle' a few of the straight straws. Nice for presentation and very easy.0

For the last party we had I got loads of french sticks which I sliced and laid out a plate of cheeses, some pate, a tray of cold meats salamis, sundried tomatoes, pickles, humous and a bowl of salad and everyone tucked into what they wanted it went down well0 -
I have found in the past that if I do sandwiches/quiches/sausage rolls/dips etc that people don't seem to eat very much and I have lots of leftovers. However, when I do a couple of big pans of, for example, beef goulash/curry/chilli/ or other one pot dishes, together with rice/pasta/potatoes/nan bread etc, people seem to really tuck in. I also find that a couple of big trays of roasted vegetables eg sweet potatoes/onions/parsnips/carrots/swede etc is always very popular.
I find that a couple of big pots of food is less time consuming and less expensive than 'bits and pieces'.0 -
The last time we hosted a buffet I cooked a huge tray of roast potatoes and served them with a bowl of garlic mayo on the side and they went down a storm!

Hey, not sure where to post this so please feel free to move it.
Anyway, its my mums birthday on saturday and like everyone else we are short of money, I was wondering if anyone has any dishes that I can cook for 6 that is quite cheap but tastes good and pretty easy (I'm not very good at cooking.) She loves KFC, I found a recipe online but it had so many ingredients it would have been expensive, so a KFC type recipe would be good.
I need to get a cake too but was thinking of making one as it'll be cheaper, maybe a brownie. Has anyone got any ideas of an easy cake to make as well?
