Here it is - adapted from one I originally got on here, I think
Easy chocolate brownie recipe!
This easy chocolate brownie recipe has never let me down! Every time I make it, it turns out soft squidgy and fudgy - everything you want from a chocolate brownie recipe!
PREP TIME 15 minutes
COOK TIME 40 minutes
TOTAL TIME 55 minutes
Ingredients
- 225g butter
- 100g cocoa powder
- 4 large eggs
- 450g sugar
- 1 capful vanilla extract
- 150g self-raising flour
- Optional to add :
- heaped teaspoon of powdered coffee (add to the cocoa)
- A few drops of tabasco
- Some broken up pieces of walnuts or pecans (about 3 handfuls) (add to the flour)
- Some fruit like pear (peeled and chipped into half cm cubes, stirred into the dry ingredients)
Instructions
- Preheat the oven to 180 c. Mine is fan so 170c and 35 mins cooking time is plenty
- Line or grease the baking tray you're going to use - a rectangular tray is best for brownies - mine is 9”square and nearly 2” deep (I line with paper)
- Melt the butter in a pan and then stir in the cocoa powder, (coffee and tabasco)
- Set aside while you make the rest of the recipe. Resist urge to taste!
- Whisk the eggs, sugar and vanilla together until they are pale and foamy
- Stir in the cocoa mixture, and the flour (with fruit/nuts stirred through it and give it a good slow mix together until it's all combined.
- Pour into your baking tin and bake for 35 minutes, until the middle has the slightest wobble compared to the sides when you wobble the tin. They will rise is the oven then fall when you take them out out. As long as the middle is barely set this works.
- Let them cool in the tin (it is why I use paper to line) then lift out onto a board and cut into squares. You could dust the top with icing sugar but we don’t.

I have a drawer front ready for DH to put the handle on and swap for the temporary one, - the last of the regular sized drawer fronts. And the big cupboard door is sanded, filled and one side is undercoated. No sounds from DH so I might nip in there and paint the other side now. I still have two medium deep drawers to do and four 800mm wide deep drawers too... And some more cupboard doors. Just keep going...
I also need to finish this month's book club book. Today!

PB's...today may be the day
...Do I really need to attend an online conference this afternoon?? We've been using PB's as a resting place for our unspent holiday money for 2020 & 2021.

I've only got my £200 original PB money in today's draw - I sold some, way back when, so those bonds date to 2000. Obviously, none of us has won the £1m today, but even the £100,000 would be quite useful2023: the year I get to buy a car5

When I am a (cruel) dictator (...some say...) - I will swap the £1m to 20 x £50k prizes so they are spread around a bit more and hopefully we will benefit!
Rather than shifting thousands I bought £250 this morning - my RS finished taking £250 a month in Jan and the interest rates are frankly pants - so, I will do this sometimes instead.
Drawer front swapped (whistles in appreciation) and it looks so much smarter - hand painted look (because it is). The cupboard door is huge and currently taking up the main counter space in the kitchen. I'm going to turn it over and attempt two top coats today (and the final one on the outside tomorrow) so it can be put back (under the two drawers we made up) - a rack of six drawers as the oven housing has only one small oven (for the summer) as we use the range all through winter.

Well I did what I said with the big door but the light was really peculiar in the kitchen and there are two areas of imperfect paint. I am still going to turn it over and do a second top coat today, but I might have to wait another day to finish the inside as I know I can't put it back, knowing it is not as good as I want it to be. A lot of work getting done on them doors I hope they turn out alright I think it depends on what time of day it is with the light I’ve painted walls and ceilings before and depending on what time of day it is they look different I think everyone day is the same old same I know mine is roll on spring or get rid of this horrible virus5
