Ah, well done PN, I don't like peanut butter, but you have reminded me of almond butter and I haven't had that for a few years. I used to love that on toast/muffins/crumpets. I think I will get some tomorrow.
Talking of crumpets (like we do on hereMy friend today gave me a packet of what she terms "healthy" ones that she found in M&S yesterday, they are 5 grain and are made in part with wholemeal flour.

It needs to be kept fairly healthy because I am already on an 18 week waiting list to see a cardiologist as an urgent referral and I don't want to risk making the cardiac problems any worse.
Like you I love salad type foods, but I have got to get a good variety of other vegetables and fruit in there as well because the blood tests have shown that I am malnourished, this came as quite a surprise as well as a shock. So I need to make getting good nutrition a real priority. I think that I may have to stop trying to make sure that I don't keep eating the same things over and over just to use it up and need to look more at perhaps just giving things like the half of a cabbage or packet of kale that gets eaten day in and day out for a week to other single friends and get a greater variety in my diet. It won't help my bank balance but at least I won't be wasting food, and I am at the stage where my health is more important right now.
I could eat much more cheaply than I do but due to my Meniere's I need to minimise overly processed foods due to the salt and frequently MSG that is added. Don't get me wrong I do enjoy the odd pie or ready prepped meal but in the main I cook from scratch with decent ingredients. That way I can enjoy the saltier things in life such as bacon, cheese and bread without accidently adding loads more hidden salt. It's scary how many things have loads of salt in including many sweet things.....0 -

holly, you can get very good protein if you have beans with a grain eg beans and rice or baked beans on toast. The only beans that are full proteins are soya beans and you can buy them in tins, they don`t need a grain to be balanced. Soya beans with salad and a baked potato is a very good balanced meal and soya beans taste nice. I suggest that you write out a rough set of meals every day or every week if you can, which will help with shopping and budget
I write my meals out almost every day, or I get side tracked. I ate out yesterday, at a big garden centre, had quiche and salad and managed to leave the couscous and the pastry base, I still felt that I had eaten enough.
I had a good meal at lunchtime, lots of veg in it and strawberries after. Finished some bacon with an egg earlier. I am quite liking to have cereal as a standby, not for breakfast but afternoon/evening
I just saw that bit about milk turning, its great in hm scones or soda bread. I keep plain scones in the freezer, no sugar and made with kefir, which is like soured milk. Marvellous for snacking and good with cheese or butter and jam, or even cream and jam

I buy the bags of frozen soya beans and just love them in a salad with chick peas, broad beans, peas, spring onion and a garlicky lemon dressing. A wee bit of diced chilli in it doesn;t go amiss either:D0

I've no need to make scones...as a rule I might pick up a small pack for about 40-50p once a year .... but they're not an item I'd make as the quantity made would be huge and it'd be a faff and lots of washing up .... so I'd rather wait until I spotted/fancied some reduced in L1dl/A1di and picked the pack up and scurried home clutching my goodies0
